Abstract:

Steamed breads are economic hawker that can be enjoyed by all people. Steamed bread fortified with moringa leaves will make relatively low nutritional products raised in nutritional standards. It produces products that are not only filling but also steamed buns are also highly nutritious. Moringa leaves contain many nutrients and benefits, and their use has not been maximized. This study aims to determine the aspects of texture, dough development capacity, and the level of organoleptic acceptance of steamed bread with the addition of moringa leaf flour. Texture testing is done using a penetrometer and getting P1 to be the softest product compare to others mixtures (P0, P2, P3) with an average value of 223 mm/50g/10s. Measurements of the dough expandability show that P1 can expand by 53.8%. Furthermore, in terms of organoleptic, P1 treatment is preferred by most (60%) panellists for the colour category. The addition of moringa leaf flour by 5% (P1) and 10% (P2) is preferred by 40% and 45% for the aroma category. In contrast for taste, 40% of panellists favour steamed bread without the addition of moringa leaf flour (P0). Then, the more addition of Moringa leaf flour, the less number of panellists who like it.

Abstract:

Ginger (Zingiber officinale) has been widely used in traditional medicine, and as raw material for cosmetics, beverages, and health functional foods. However, some adverse effects of ginger have been reported. In addition, the hot and pungent taste of ginger leads to reduced consumption. To overcome these problems, methods for the production of fermented, steamed (or steamed-dried), aged, roasted and beopje ginger have been developed. This review provides an overview and summary of new ginger processing procedures, including methods to reduce the pungent flavor of ginger, extend shelf-life, increase the health-functional compound content, and improve safety. These attempts might improve the consumption of ginger as well as prospective applications of processed ginger for food, cosmetics, and the pharmaceutical industry, also as discussed in various patents.

Abstract:

Untargeted metabolomics is a valuable tool to analyze metabolite profiles or aroma fingerprints of different food products. However, less attention has been paid to determining the aroma characteristics of Chinese steamed breads (CSBs) by using this approach. The aim of this work was to evaluate the key aroma compounds and their potential generation pathway in Chinese steamed bread produced with type I sourdough by a metabolomics approach. Based on the aroma characteristics analysis, CSBs produced with type I sourdough and baker’s yeast were clearly distinguishable by principal component analysis (PCA) scores plot. A total of 13 compounds in sourdough-based steamed breads were given the status of discriminant markers through the untargeted metabolomics analysis. According to the odor activity values (OAVs) of discriminant aroma markers, ethyl acetate (fruity), ethyl lactate (caramel-like), hexyl acetate (fruity), (E)-2-nonenal (fatty) and 2-pentylfuran (fruity) were validated as the key volatile compounds in the breads produced with type I sourdough as compared to the baker’s yeast leavened steamed bread. The metabolite analysis in proofed dough indicated that esters are mainly generated by the reaction between acid and alcohol during steaming, and aldehydes are derived from the oxidation of palmitoleic acid and linoleic acid during proofing and steaming.

Abstract:

This present study evaluated the effects of processed P. multiflorum on osteogenesis using Sarcoma osteogenic (SaOS-2) cell lines and osteoclastogenesis of bone marrow-derived macrophage cells (BMM) and to elucidate differences in effect on the expression of bone-related proteins between commercially sold P. multiflorum and patented, in vitro-propagated Korea Institute of Oriental Medicine (KIOM) P. multiflorum. Raw P. multiflorum and P. multiflorum that were stir-baked and steamed in black bean juice were compared, and western blotting analysis was performed to investigate the expression of bone remodeling-related proteins in SaOS-2 cells. In the cells treated with P. multiflorum steamed in black bean juice, the expression of RANKL was decreased, whereas that of osteoprotegerin, alkaline phosphatase, Runx2, and osterix was increased. Owing to these results, we conclude that processed P. multiflorum can be used as an alternative treatment for bone diseases such as osteoporosis, osteopenia, periodontitis, and Paget’s disease.

Abstract:

One evening in April 1926 a party of Italian emigrants outward bound from Genoa aboard the steamer Conte Verde celebrated their impending new life in Argentina by singing the fascist anthem “Giovinezza.” They thereby angered a larger number of passengers and crew, who responded with a lusty rendition of the Socialist “Bandiera Rossa.” Tension grew, but Conte Verde’s captain averted further unpleasantness by escorting the fascists to safety at the ship's bow; at the same time Second Captain Rivarola restored order among the antifascists. The Genoa police prefecture reported the incident to Benito Mussolini's cabinet, but as the quarrel had been transferred to Argentine soil there was little to be done–for the moment. The secret police would maintain surveillance of the troublemakers in Argentina and of their families in Italy.

Abstract:

Study on quality changes of boiled salted Carp fish, processed using different cooking methods during chilling storage has been conducted. The study was intended to obtain an information on the effect of cooking method on the shelf-life of boiled salted carp fish (Cyprinus carpio) at chilling temperatures. Fish was soaked in a 0.2% of alum solution and then marinated in condiment solution for 30 minutes. Fish were cooked for 4 h by two different methods i.e steaming and boiling, at 98-100 oC, and then dried in the oven at 80-90 oC for 1 hour. Boiled salted fish then were stored at chilling room (2-4 oC) and observed every 3 days for 15 days. The quality of boiled salted fish were analyzed i.e proximate at the beginning and the end of storage, while moisture content, pH, TVB, total plate count, mold and sensory test were conducted during chilling storage. The results showed that steamed boiled salted carp fish had higher protein content, pH and also have better product which was preferable by the panelists. Based on this result steaming method was recomended to be used as processing method for production of boiled salted carp fish from fresh water. Sensory test found that panelists preferred steamed product which had a good appearance, odor, taste and texture. However steamed product had faster increase of moisture content, TVB, and number of bacteria as well as the decrease of pH value and odor causing faster deterioration of product compared to boiling method. Based on microbiological tests, the boiled salted carp fish cooked by steaming methods were safe to be consumed before 6 days and the boiling method before 9 days, since storage exceed that periods resulted in number of bacteria already reached the maximum number allowed and became not suitable for human consumption.

Abstract:

Malnutrition, hunger, and poverty are still major challenges globally especially in Sub-Saharan Africa affecting most countries like Nigeria. Legumes play key roles in food and nutritional security, health, and income generation. This review highlights status of pulse production and consumption in Nigeria and need for improvement. The study involved in-depth desk review. Data sources include FAO Statistics and other publication sources. Cowpea is Nigeria’s major pulse accounting for 95.45% area and 97.55% of the pulse production in 2016-18. Nigeria is the leading global cowpea producer with 39% production in 2016-18. However, the cowpea area has been declining, with 30% loss at 1.71% yearly between 2006-08 and 2016-18. The production appreciated by 40% viewed from 1996-98 due to increase in yield; but, overall, Nigeria’s cowpea production is marked with fluctuations/stagnation. It, thus, imports to meet domestic demand. In contrast, cowpea area, yield and production received steady and remarkable positive growth in places like Niger (73% at 2.8%, 213% at 5.9%, and 428% at 8.7% annually, respectively). Per capita availability of pulses in Nigeria is over 10 times less than cereals’ and roots/tubers’; hence, pulses contribute poorly to daily calorie and protein intakes. They are mainly utilized as cooked bean and steamed/fried pastes. Low pulse consumption is seriously contributing to nutritional problems in developing countries like Nigeria. Diverse utilization, optimizing nutritional quality of the traditional dishes, and improving safety and acceptability of especially those sold as street food can enhance their consumption, production and contribution to nutritional security.

Abstract:

In the search for another appealing source of future food to cover the increasing need for nutrients of a growing global population, this study reviewed the potential of insects as human food. Most previous reviews have dealt with insects as a group, making it difficult to evaluate each individual insect species as food because of the generalized data. This study assessed some common edible insects, but concentrated on mealworms. Insects, especially mealworms, have a similar or higher nutritional value than many conventional food sources. For example, the protein content of mealworm larvae is reported to be almost 50% of dry weight, while the fat content is about 30% of larval dry weight. Mealworms can be cooked by different methods, such as hot air drying, oven broiling, roasting, pan frying, deep frying, boiling, steaming, and microwaving. Oven broiling in particular gives a desirable aroma of steamed corn for consumers. Changes in the flavor, taste, and texture of mealworm products during storage have not been studied, but must be determined before mealworms can be used as a commercial food source. Factors controlling the shelf-life of mealworms, such as their packaging and storage, should be identified and considered with respect to the feasibility of using mealworms on a commercial scale.

Abstract:

This paper presents a preliminary attempt at obtaining an order-of-magnitude estimate of the global burden of disease (GBD) of human infectious diseases associated with swimming/bathing in coastal waters polluted by wastewater, and eating raw or lightly steamed filter-feeding shellfish harvested from such waters. Such diseases will be termed thalassogenic—caused by the sea. Until recently these human health effects have been viewed primarily as local phenomena, not generally included in the world agenda of marine scientists dealing with global marine pollution problems. The massive global scale of the problem can be visualized when one considers that the wastewater and human body wastes of a significant portion of the world's population who reside along the coastline or in the vicinity of the sea are discharged daily, directly or indirectly, into the marine coastal waters, much of it with little or no treatment. Every cubic metre of raw domestic wastewater discharged into the sea can carry millions of infectious doses of pathogenic microorganisms. It is estimated that globally, foreign and local tourists together spend some 2 billion man-days annually at coastal recreational resorts and many are often exposed there to coastal waters polluted by wastewater. Annually some 800 million meals of potentially contaminated filter-feeding shellfish/bivalves and other sea foods, harvested in polluted waters are consumed, much of it raw or lightly steamed. A number of scientific studies have shown that swimmers swallow significant amounts of polluted seawater and can become ill with gastrointestinal and respiratory diseases from the pathogens they ingest. Based on risk assessments from the World Health Organization (WHO) and academic research sources the present study has made an estimate that globally, each year, there are in excess of 120 million cases of gastrointestinal disease and in excess of 50 million cases of more severe respiratory diseases caused by swimming and bathing in wastewater-polluted coastal waters. Filter-feeding shellfish/bivalves, which are often harvested from wastewater-polluted areas of the sea, can effectively filter out and concentrate the microbial pathogens in the seawater. It can be roughly estimated that annually there are some 4 million cases of infectious hepatitis A and E (HAV/HEV), with some 40 thousand deaths and 40 thousand cases of long-term disability, mainly chronic liver damage, from consuming raw or lightly steamed filter-feeding shellfish/molluscs harvested globally from polluted coastal waters. The total global health impact of the thalassogenic diseases—human infectious diseases associated with pathogenic microorganisms from land-based wastewater pollution of the seas—is estimated to be about 3 million ‘disability-adjusted life years’ (DALY)/year, with an estimated economic loss of some 12 billion dollars per year. Due to the preliminary nature of the estimates in this study it is appropriate to assume that all of the above figures are no more than first approximations and that the true figures may be 50% higher or lower. Nevertheless, it is the author's belief that this study indicates that wastewater pollution of the sea results in a multi-billion dollar per year health burden and that preventing wastewater pollution of the sea is worthy of inclusion on the global agenda of marine pollution prevention and control.

Abstract:

ABSTRACT Sorghum is a food crop commodity that has important potential as a source of food and renewable energy for food and energy independence during the COVID-19 pandemic. Community service activities regarding processing sorghum into food and energy are very important in dealing with food dependence on rice and fuel energy from crude oil. Through extension activities and training on sorghum processing, it is hoped that it can increase public knowledge about sorghum and its processing. The method used is counseling and training on sorghum processing to the community. Extension and training activities for processing sorghum into alternative food and renewable energy in order to increase community knowledge in Blang Nibong Village, Samudera District, North Aceh Regency have been carried out and can be well received by the community. The community is very enthusiastic about participating in the service activities. The community has knowledge of the processing of sorghum into sorghum flour as an ingredient for processed food products such as steamed brownies, krispi tofu spices, cakes, and nagasari. Partners also have knowledge about other benefits of sorghum, namely as a renewable energy source. Sorghum stalks are known to contain bioethanol as fuel. Programs like this are very important to carry out, especially for people living in rural areas that have the potential for developing sorghum areas so that the program will be sustainable.

Abstract:

The article is devoted to the study of the historical poetics of the Olonkho Vilyui Yakuts. The relevance of the study is due to the need for an in-depth study of the archaic and late layers of the Yakut heroic epic based on the materials of the Vilyui expedition of 1938, with the help of which it is possible to reveal the specifics of the olonkho of the Vilyui region. The author of the article concludes that the materials of this expedition accurately reflect the peculiarities of the local tradition under consideration. The archaic stratum of olonkho is revealed, which is characterized by a ritual parenthetic song before or after the performance of the epic, the preservation of the mythologeme of the creation of the world, the image of the sacred birch Aar Kuduk Khatyng, a less developed description in the epic beginning. It has been established that the formation of the late layer of olonkho poetics is associated with a number of reasons, including the following: the cumulative nature of the characters’ actions under the influence of a fairy tale; demythologization; replacement of the heroic with everyday life; reflection of the negative consequences of the development of society; the appearance of borrowed words, the names of Russian cities, Christian concepts, images of Russian girls, the fire-breathing Serpent Gorynych, Baba Yaga as a result of close ties with Russians, their culture and worldview; the emergence of a war motive between the aiyy and abaasy tribes as a reflection of the Great Patriotic War; the image of the achievements of technical progress (in particular, the steamer); displacement of images; using the image of a shaman; the introduction of an intermediate layer of images of semi-ayy and semi-baasy.

Abstract:

Factors like socio-cultural and human factors, spirituality and religiosity have some definite association with various aspects of mental health and illness. Spirituality in recent times has been entertained as a major factor in determining the course of mental health and illness; it drew the attention of mental health clinicians and researchers to find out its temporal relationship with mental illness and psychological wellbeing. Many authentic literatures came up with the view that positive spirituality does have some potentialities to enhance as well as protect the positive mental health and psychological well-being of the people. Spirituality can also lower the distress level and increase the positive coping ability of people. The aim of this article is to explore the role of spirituality in psychiatry in terms of evolution of psychopathology, understanding of the illness and finally, its role in treatment of the psychiatric settings. This article also aims to sensitize mental health clinicians to remain positive towards the religious and spiritual beliefs of patients and to use those things in the therapeutic process. Abstract:

Surgical diseases. At head injuries was carried out bloodletting from the jugular vein and infusion into the nasal cavity of chopped horseradish and citrus, mixing with wine, to cause nasal discharge, the outflow of which had a positive influence on the course of the disease. Surgical procedures in the oral cavity of a horse. Sharp teeth are blunted if you insert an iron bar between them. When chewing a bar, the horse must break its sharp ends. Wolf teeth or fangs can be removed with a chisel. The salivary glands under the tongue was called tuberculosis which in some cases were removed surgically. The wounds of the tongue were called “mucus”, lubricated with quicklime, mercury, honey. In cases of laminitis, the reasons for which could be wind, rye, water, treatment was based on blood from the jugular vein, tail, cheeks, limbs or from the veins of the palate, with the simultaneous use of herbal remedies such as asparagus, laxatives (cleansers), and bathing the limbs in cold water. When sitting (something like steaming from the saddle) were used wraps with vinegar, clay or washing with the above means. In cases of abdominal edema were used wet and warm compresses using a harness. When the scapula was damaged, a massage with rubbing a mixture of bean oil, turpentine and olive oil was effective. If there were cracks in the bone, the place on the other side of the crack was burned with hot iron, and in addition to wrapping with the roots of plants, leaves and bread, a bandage of thin boards and a bandage was applied. Treatment – blood from a vein over the orbits, as well as well-washed eyes with well water. In endosperm, it was recommended to inject powdered substances such as feces, pepper, ginger, feathers, lard, alum into the eye.

Abstract:

Abstract Thermoplastic molding has been prepared from beech wood flour steamed at 180°C or at higher temperatures without any additives. It exhibited a smooth and lustrous surface and had a high density of approximately 1.45 g cm-3. The internal structure of molding revealed that the flour particles were completely surrounded by black resin-like substance which was thermoplasticized by heat and pressure during the molding process. The chemical composition of the steamed flour and physical properties of molding were examined as a function of steaming temperature. Maximum bending strength and Young's modulus of molding reached 63 MPa and 11 GPa, respectively, at 180°C of steaming, which were much higher than those of a hardboard. The water absorption of the molding was 8% or less and decreased with the steaming temperature.

AbstractResearch in Rwanda demonstrated that orange-fleshed sweetpotato (OFSP) purée (steamed, mashed roots) was an economically viable, vitamin A enhancing ingredient in baked products when the purée was produced and used in the same bakery. Having a storable, packaged OFSP purée produced by a firm to supply bakers is an alternative model. Vacuum-packed OFSP purée with preservatives with a four-month shelf-life at 23°C was developed by the International Potato Center under laboratory conditions in 2015. Turning it into a commercial reality required developing a public-private partnership to establish an OFSP purée-bread value chain. The phases in developing the chain are described. Cost-benefit assessment focuses on two points along the chain: the farmers producing roots for the purée factory and purée production. The first OFSP bread began to be marketed in six Tuskys’ stores in June 2015 at a premium price (5 Ksh above its regular bread), reaching 20 stores by August 2016. OFSP bread was well-received by consumers. Purée production became profitable (18% profit margin) when we shifted from using peeled to unpeeled roots--the new product being a “high fiber” purée. Commercial OFSP purée production has been improved and is poised for profitable, larger-scale output.

Abstract:

Ginseng (Panax ginseng C. A. Mey.) is a traditional medicine that has been utilized for over 2000 years in Asia and shows varied pharmacological effects. Red ginseng (RG) is steamed and dried ginseng root and is considered to be more effective. Heating inactivates its catabolic enzymes and increases the activities of RG, which can improve the immune system, alleviate fatigue, and has anti-inflammatory effects and antioxidant activity. In addition, RG has a good anti-aging effect, but its mechanism is unclear. Senescence, a side-effect of normal developmental and metabolic processes, is a gradual decline in physiological integrity and function of the body. Senescence is usually associated with a variety of diseases, including neurodegenerative diseases and diabetes. Research on anti-aging and the prolongation of life span has always been a focus topic. In this study, we investigated the molecular mechanism of RG that results in prolonged the life span for male Drosophila melanogaster. Isobaric tag for relative and absolute quantitation (iTRAQ) was used to identify protein changes in an old male D. melanogaster treated with RG. The differential proteins were verified by qRT-PCR and western blotting. The results showed that 12.5 mg/ml RG prolonged its life span significantly. iTRAQ results showed that, compared to the control group, 32 upregulated proteins and 62 downregulated proteins displayed significantly differential expression in the RG group. In this study, we explored the pathways that RG may participate in that extend the life span of D. melanogaster, and the results showed that the PI3K/AKT/FoxO pathway was involved. In addition, 4E-BP increased and participated in the regulation of life span.

Abstract:

Prawn allergy is a common cause of allergic reactions in countries where crustacean is a famous seafood. Macrobrachium rosenbergii (giant river prawn) is declared as a local major food allergens, causes severe symptoms like asthma and anaphylactic shock. Therefore, the goal concerning this research is to identify the allergenicity of heat treated of M. rosenbergii. Prawn extracts have been prepared using fresh raw prawn and three heat-treated prawn flesh (boiled, steamed, fried), then afterward analyzed by the usage of sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE) in conformity with their protein profiles. Allergenic proteins were identified by means of immunoblotting by the use of sera from 30 prawn-allergic patients. The identities of selective major allergens were then determined by mass-spectrometry analysis. The raw prawn has 27 protein fractions between 6 to 207 kDa, while the heat-treated prawns have reduced number of protein bands. Six prominent bands at 72, 65, 48, 38, 36, and 30 kDa were considered as the major allergens of raw extract. Meanwhile, after heat remedies applied, most of the IgE-binding bands were disappeared except for three major allergens at 38, 36 or 30 kDa which were still remain to be seen, suggesting as highly thermostable allergens. Among heat-treated prawns, steamed and boiled elicited more allergenic bands, contrast to fried prawn extract. Mass spectrometry analysis identified two selected major allergens at 36 and 48 kDa as tropomyosin and arginine kinase, respectively. As a conclusion, this study indicated that both thermostable and thermolabile proteins from M. rosenbergii were allergenic. Tropomyosin and arginine kinase were identified as the most important major allergens. Thus, the knowledge on thermostability of prawn allergens are crucial for improving diagnosis and management of prawn allergic patients in this county.

Abstract:

Introduction: Face Detection is used in many different steams like video conferencing, human-computer interface, in face detection, and in the database management of image. Therefore, the aim of our paper is to apply Red Green Blue ( Methods: The morphological operations are performed in the face region to a number of pixels as the proposed parameter to check either an input image contains face region or not. Canny edge detection is also used to show the boundaries of a candidate face region, in the end, the face can be shown detected by using bounding box around the face. Results: The reliability model has also been proposed for detecting the faces in single and multiple images. The results of the experiments reflect that the algorithm been proposed performs very well in each model for detecting the faces in single and multiple images and the reliability model provides the best fit by analyzing the precision and accuracy. Moreover Discussion: The calculated results show that HSV model works best for single faced images whereas YCbCr and TSL models work best for multiple faced images. Also, the evaluated results by this paper provides the better testing strategies that helps to develop new techniques which leads to an increase in research effectiveness. Conclusion: The calculated value of all parameters is helpful for proving that the proposed algorithm has been performed very well in each model for detecting the face by using a bounding box around the face in single as well as multiple images. The precision and accuracy of all three models are analyzed through the reliability model. The comparison calculated in this paper reflects that HSV model works best for single faced images whereas YCbCr and TSL models work best for multiple faced images.

Abstract:

Introduction This paper is based upon an investigation into the life of a street market in the city of Ha Noi in Vietnam, and experience of the street food served on Ha Noi’s pavements. It draws upon interviews with itinerant food vendors conducted by the researchers and upon accounts of their daily lives from a Vietnamese film subtitled in English and French, sourced from the Vietnamese Women’s Museum (Jensen). The research considers the lives of the people making and selling street food against the distilled versions of cultural experience accessible through the pages of two recent English language cookbooks focussing upon this cuisine. The data from the fieldwork is used as a point for critical comparison (Fram) with recipes and descriptions from Hanoi Street Food (Vandenberghe and Thys) and Vietnamese Street Food (Lister and Pohl), two recent relevant English language cookbooks. The research question addressed is “How are the everyday lives of Vietnamese street market cooks (mis)represented in cookery-related books published for an English-language readership?” The research team comprises an Australian Cultural Studies academic (Lelia Green) and a bi-lingual Vietnamese researcher (Nguyen Hong Van), who is Ha Noi born and bred, but who has lived overseas and whose first degree, in Sociology, is from a Canadian university. In each other’s company and over a period of some weeks, Lelia and Van spent more than 40 hours on ethnographic fieldwork in street markets, and interviewing street vendors. The purpose of the research was exploratory, but it was also undertaken as a means of making the labour and lives of marginalised women more visible, since most itinerant food vendors in Vietnam are women (Jensen). As Bhomik notes, male vendors “are engaged in motor cycle repair or sale of higher priced goods such as personal products, souvenirs etc. and their earnings are higher” (2261). Although the teamwork between Lelia and Van went some way to resolve the challenges posed by insider/outsider qualitative research (Corbin, Dwyer, and Buckle), Van has never lived or worked as a street vendor. First Take an Informal Street Market … Eating on the Street An informal Vietnamese street market is a multi-layered space, ordered according to the geography of the area in which the food is prepared and consumed. The informality of a street market indicates its status between legitimacy and repression. Informal street markets spring up in locales where there is significant demand—usually office workers nearby, and schools. The food they sell is cheap and flavourful, catering for the needs of people who have little time or money and want something hot and nourishing to start, punctuate, or end the day. As markets grow, so the vendors in the market constitute a secondary population in need of sustenance. Itinerant street vendors carry with them everything they need for their day’s work. Typically this includes a little oil or coal-based stove, their raw ingredients, dishes or trays for food preparation and serving, often a bowl for washing food or utensils, and a large bag to carry the dirty dishes used by their customers. Often these tools of their trade will be carried in two baskets balanced upon a pole that acts as a yoke across the vendor’s neck. Sometimes well-resourced vendors will also carry, (or push a bicycle or cart with), sets of small plastic stools and tables, so that their clients can sit and enjoy their food. In the semi-tropical climate of Ha Noi, carrying the raw materials to cook for and feed dozens of patrons is a tiring and difficult business. These street vendors’s lives are made more complex by the semi-legitimacy of the informal street market where itinerants are viewed as potential sources of income by a series of officials who extort small but frequent payments in the form of demanding bribes, or levying fines for illegal activity such as obstructing the pavement (Lincoln). Trung, who sells crab noodles, says the police are the most difficult aspect of her job: “they can come anytime and confiscate all my stuff and give me a fine. One time I was so panicked when I saw them approaching on a small truck that I took all my bowls and ran. The bowl slipped out of my hands and cut into my leg. I still have a deep scar from that accident” (Trung). Now add a smattering of street vendors. Bánh Mỳ: Bread Rolls “1 French baguette”, states the Vandenberghe and Thys recipe for bánh mỳ, implicitly acknowledging the hundred years of French colonisation which provides Vietnam with its excellent breads and pastries, “beat the eggs lightly in a mixing bowl, crumble the paté and combine the paté and the lightly beaten eggs. Put the oil in a small frying pan and cook the omelette […] fold the omelette double and put it on the [grilled, heated] bread […] the variations are endless” (71). The young Vietnamese woman, Anh, sells bánh mỳ trứng ngải cứu, bread rolls with egg cooked with mugwort, an aromatic leafy herb. She explains her initial motivation to sell food on the street: “some women in my village already came to the city to sell. I can’t earn much money at home and I need money to send my children to school, so I decided to follow them” (Anh). She shares rented accommodation in the city with other women—sometimes up to ten people in a room (Jensen)—and starts her day at 4.30am, washing vegetables and preparing her baskets. Although a street trader herself, she is networked into a complex set of supply and delivery connections. Her eggs and bread are delivered fresh each morning and she buys the mugwort from a market near her lodgings. “I leave home around 6am and start walking along the streets. […] I mostly sell to shop keepers. They have to stay in their shop so I bring breakfast to them. I walk through a lot of streets, whenever someone calls out I will stop and make bread for them” (Anh). Mid-morning, at around 10am, Anh goes back to her home to have lunch and prepare for the afternoon, with a fresh delivery of eggs around 1.00-1.30pm. Usually, she leaves again around 2.00pm “but if it’s too hot outside, I will stay until 3pm, because it is very tiring to walk in the heat, and people don’t eat that early either. I go home whenever I sell out […], sometimes as early as 4pm, or as late as 7pm” (Anh). Like many street vendors, Anh has sought out points of contact with the local community to punctuate her walking with episodes of rest. Her customers are mainly other Vietnamese people, “shop keepers and residents of the streets I walk along every day. There is an old lady. I sit in front of her shop every afternoon from 3pm to 5pm. She eats one egg every day” (Anh). Anh has been selling Bánh mỳ on the streets for three years, but this is not her only source of income: “At home I grow rice, but I can only harvest it at the end of the season. It only takes a storm or hail to destroy the whole effort I spend for months […] This [food] is very easy to make, and I make a little profit everyday” (Anh). She has never worked from a recipe book: “I think only people in hotels, like a big chef who makes complicated dishes need recipes, this one is very easy, just a common everyday food” (Anh). As for the problems posed by the policing of informal markets, Anh says: “if I am not careful, the ward police will give me a fine for selling on the street.” Such a calamity can write off the profit of many hours’ or days’ work. Xôi: Sticky Rice Xôi is a popular street food dish, and Lister and Pohl provide two recipes, one for xôi lạc (sticky rice with peanuts)(68), and one for xôi xéo (sticky rice with turmeric and mung beans, and fried shallots) (80). Nga, the xôi seller interviewed for this research, sells both types of sticky rice along with xôi gậc (a festive red sticky rice cooked with and coloured by spiny bitter gourd, and typically eaten at Tết, the celebration for the Lunar New Year) and xôi đỗ đen, sticky rice with black bean. She used to specialise in only one kind of sticky rice but, as she says, “business was slow so I added other types of sticky rice. I sit here in the morning everyday anyway, so I sell different types, a small quantity for each” (Nga). The biggest complication for street vendors selling sticky rice is the requirement that it is still being steamed just before being sold, so that it is hot, soft, and sticky, and not dried out. The cooked sticky rice is usually packed in banana leaves under a plastic cover and put in a bamboo basket. The basket helps with ventilation while banana leaves keep the rice moist and the plastic cover keeps in heat. Traditionally, xôi is also sold in banana leaves. Nga uses first a layer of banana leaf, then one of plastic, and finally newspaper. Nga is a grandmother and constructs her street vending as a retirement job, which puts food on the table for her husband and herself. In Vietnam, there is a tradition that the younger generations look after their elders, but her work as a street vendor means that Nga and her husband can retain their autonomy and help their own family, for longer. Nga starts cooking at 4.00am, but her street food is only one element of her income: “In addition to selling here, I also deliver to restaurants. Actually most of my income comes from them. I deliver at around 5 to 5.30am, and start selling here at 6” (Nga). Both of Lister and Pohl’s recipes start with soaking the sticky rice overnight in water, just as Nga does. She says, “I wash the rice and soak them before I go to bed the night before. I get up, start the stove which uses black coal. I sell out all the rice everyday, otherwise it won’t taste good […] usually I sell out at 8 or 8.30am, 9am at the latest. I don’t work in the afternoon. I pick up my grandchildren at 4pm and take care of them until the end of the day.” Nga has strong views about the place of recipes in cooking, especially in cooking as a business: I don’t need to learn from a book. Written recipes or informal teaching from relatives is the same, they are just the starting point. What matters is you learn from your own experience. For example, you soak your rice for 6 hours today, but your customers complain that the rice is not soft, so you soak it for 8 hours next time. Or maybe you sell to a poorer community, you will adjust your ingredients to cheaper type, so you can reduce your price but still make profit; but if you sell in a richer neighbourhood, you make sure you have good quality, even with higher price, or else they will not buy from you (Nga). Lister and Pohl dedicate a two-page spread (70-1) to Ðặng Thị Sáu and her Xôi shopfront stall, noting that she learned her business from her mother-in-law who was “an itinerant sticky rice peddler for most of her life, walking the city streets, selling from bamboo baskets. It was a hard and uncertain life and not one Sáu wanted to follow” (70). Sáu’s compromise, ultimately, was to sell sticky rice from the comparative security and stability of a fixed location. Lister and Pohl’s focus upon Sáu and her food, along with the pictures of everyday life featured in Vietnamese Street Food, mean that this is more than an inspirational cookbook. It is a vivid introduction to the vernacular foodways of Vietnam “a set of social, economic and cultural practices around the production and consumption of food that are normatively distinctive to an ethnocultural group” (Jonas 119). Bún Riêu Cua: Crab Meat Noodle Crab meat noodle is a complicated recipe and a reminder that many people who eat street food do so because these are favourite Vietnamese dishes which may require considerable effort to prepare. The specialisation of street food vendors, making a complicated dish for the relish of dozens of customers, allows busy Vietnamese workers to enjoy their authentic cuisine at an affordable cost without the time constraints of buying multiple ingredients and making the dish themselves. The recipe in Hanoi Street Food involves several steps: preparation of the sauce using sautéing, frying and reducing (Jones); cooking of the crab in boiling water (not including separately bought crabmeat used in the sauce); creation of a chicken stock, to which the sauce is added; along with the washing and chopping a range of vegetables including soya bean sprouts, spring onions, lettuce, fresh herbs, lime etc., some of which is used as garnish (Vandenberghe, and Thys 90). Trung and her husband have been selling their bún riêu cua for five years. For nine years prior to working as a street food vendor, Trung was a recyclables collector. She began working in the city when she “followed a cousin to Ha Noi so I could earn money to support my family of six people. At first I collected materials such as plastic bottles, metal, papers, etc, but because I carried too much on my shoulders, I developed severe back pain and shoulder pain” (Trung). Now she and her husband use a bicycle to help carry the various necessities for her bún riêu cua street stall, using the vehicle to reduce some of the physical burden of the work. Trung learned how to make bún riêu cua from an aunt in Hai Phong, “I just observed her and other people”. The dish remains time consuming, however:I get up at 3am to start preparing the crab and cook the soup. My husband washes vegetables. It often takes us about 2 hours. By 5am, we leave the house, and we are here by 5.30, ready to sell breakfast […] I am most busy during lunchtime, from 10am to 1-2pm. Breakfast time can last from 6am to 9am. When I am not selling to customers I often get tired and easily fall asleep because I always crave sleep. In between, my husband and I wash dishes. He also delivers to people too. We get lots of phone calls from patients of the hospitals nearby. They say my food is more delicious than food in the hospital’s canteen […] Usually I go home around 4pm in the summer and 5 to 6pm in the winter. But I also stop by different shops to buy ingredients for the next day on my way home. Once I get home, I wash the bowls, re-supply and re-arrange my stuffs, and do some preparation. I work until I go to bed at 9pm (Trung). The illustration for this recipe in Hanoi Street Food is not of the dish itself, but of young Vietnamese men enjoying the dish. As is the case with Lister and Pohl, Vandenberghe and Thys’s book is about more than recipes, it is a rich evocation of daily life on the streets of Vietnam. Serve with a Side-dish of Conclusions Authentic street food is cooked, sold and consumed on the street. However, street food cookbooks tend to recommended shopfront eateries, partly because they are easier to find, and are more convenient, in that neither the tourist nor the vendor is at risk of police intervention. Another reason for featuring the more established vendors with their own premises concerns food hygiene: In 1989 the Vietnamese government adopted a law on the protection of people’s health. A survey on food samples in Hanoi showed that 47 per cent were microbiologically unsafe. [This has now changed.] The government has adopted two practices for ensuring safer street food, namely, monitoring street food vendors through a licensing system, and educating and training them on hygiene (Bhowmik 2260). Such licensing, training and the maintenance of hygiene standards are more difficult to police with itinerant food vendors. In the two cookbooks featured, ingredients tend to be measured as to specific amounts, with the idea that the result should be predictable. Street vendors, however, learn to cook their signature dishes from friends, relatives, and experience. They do not measure their ingredients while cooking, and their products vary from one vendor to another, and also to some extent from day to day, even given the same cook. This creates a special characteristic of street food and means that regular customers gravitate to particular vendors whose choice of seasoning and cooking techniques culminates in the most attractive results according to their personal taste. While there are lots of stalls captioned as bánh mỳ, regular customers will find that there are significant differences between stalls. One reason for this is offered in Lister and Pohl: small quantities of special ingredients that are difficult to get in Vietnam and impossible elsewhere. The cook in a featured Bánh cuốn stall (selling rice pancakes) adds a drop of giant water bug juice to season her dipping broth: “ ‘It’s the real thing! One drop off the top of a chopstick is enough’ she explains” (Lister, and Pohl 33). As is clear from the interviews with vendors, itinerant sellers of street food don’t use recipe books, and have generally learned how to cook their dishes through women’s networks of family and friends. The two cookbooks discussed are designed for consumption by people who engage in or aspire to “food and drink tourism” (Boniface vii) in Vietnam, whether the readers have visited in person or become aware of the cuisine through popular culture, such as Luke Nguyen’s SBS cooking shows (Nguyen). They are as much coffee table books as collections of recipes, and are written by westerners for a western readership. The recipes focus on ingredients that can be sourced in everyday western contexts but the beautiful and evocative photographs of daily life in Vietnam, supplemented by written commentary on people and place, clearly locate the recipes in their Vietnamese cultural context. Culinary tourism allows people unfamiliar with a cuisine and culture to use “food to explore new cultures and ways of being” (Long 21). Street food vendors are part of many communities. They require knowledge, skill, and personal networks to acquire the quality ingredients at the best possible price for the daily routine of food preparation and selling. Whereas recipe books deal with domestic-scale food production, a vendor may cook for a hundred or more people in a single day. Many itinerant street food sellers work in the city to support absent husbands and children in rural locations, taking money home on a regular basis ($20 profit a fortnight makes their labour worthwhile), and spending 10 days in 14 on the streets (Jensen). As women help each other to begin a career as a vendor through oral teaching, observation, and first-hand experience, they do away with the invisible, authoritative voice of cookbooks. Itinerant food sellers are also a part of the larger communities in which they work, including customers, their suppliers, and other actors such as the authorities and the media. This larger community sets the tone for their food, and their lives. The vast majority of vendors of street food are women, prepared to work hard and with passion and pride to make enough money to make a difference to their families. Books about street food might help recreate some of the dishes that can be bought on the streets of Vietnam. After participating in street life, however, as an observer or customer, it becomes clear that recipe cookbooks intended for English readers only capture part of the complexity and beauty of street food, and the lives of those who make it. Abstract:

A common criticism of the rhythm video games genre — including series like Guitar Hero and Rock Band, is that playing musical simulation games is a waste of time when you could be playing an actual guitar and learning a real skill. A more serious criticism of games cultures draws attention to the degree of e-waste they produce. E-waste or electronic waste includes mobiles phones, computers, televisions and other electronic devices, containing toxic chemicals and metals whose landfill, recycling and salvaging all produce distinct environmental and social problems. The e-waste produced by games like Guitar Hero is obvious in the regular flow of merchandise transforming computer and video games stores into simulation music stores, filled with replica guitars, drum kits, microphones and other products whose half-lives are short and whose obsolescence is anticipated in the annual cycles of consumption and disposal. This paper explores the connection between e-waste and obsolescence in the games industry, and argues for the further consideration of consumers as part of the solution to the problem of e-waste. It uses a case study of the PC digital distribution software platform, Steam, to suggest that the digital distribution of games may offer an alternative model to market driven software and hardware obsolescence, and more generally, that such software platforms might be a place to support cultures of consumption that delay rather than promote hardware obsolescence and its inevitability as e-waste. The question is whether there exists a potential for digital distribution to be a means of not only eliminating the need to physically transport commodities (its current 'green' benefit), but also for supporting consumer practices that further reduce e-waste. The games industry relies on a rapid production and innovation cycle, one that actively enforces hardware obsolescence. Current video game consoles, including the PlayStation 3, the Xbox 360 and Nintendo Wii, are the seventh generation of home gaming consoles to appear within forty years, and each generation is accompanied by an immense international transportation of games hardware, software (in various storage formats) and peripherals. Obsolescence also occurs at the software or content level and is significant because the games industry as a creative industry is dependent on the extensive management of multiple intellectual properties. The computing and video games software industry operates a close partnership with the hardware industry, and as such, software obsolescence directly contributes to hardware obsolescence. The obsolescence of content and the redundancy of the methods of policing its scarcity in the marketplace has been accelerated and altered by the processes of disintermediation with a range of outcomes (Flew). The music industry is perhaps the most advanced in terms of disintermediation with digital distribution at the center of the conflict between the legitimate and unauthorised access to intellectual property. This points to one issue with the hypothesis that digital distribution can lead to a reduction in hardware obsolescence, as the marketplace leader and key online distributor of music, Apple, is also the major producer of new media technologies and devices that are the paragon of stylistic obsolescence. Stylistic obsolescence, in which fashion changes products across seasons of consumption, has long been observed as the dominant form of scaled industrial innovation (Slade). Stylistic obsolescence is differentiated from mechanical or technological obsolescence as the deliberate supersedence of products by more advanced designs, better production techniques and other minor innovations. The line between the stylistic and technological obsolescence is not always clear, especially as reduced durability has become a powerful market strategy (Fitzpatrick). This occurs where the design of technologies is subsumed within the discourses of manufacturing, consumption and the logic of planned obsolescence in which the product or parts are intended to fail, degrade or under perform over time. It is especially the case with signature new media technologies such as laptop computers, mobile phones and portable games devices. Gamers are as guilty as other consumer groups in contributing to e-waste as participants in the industry's cycles of planned obsolescence, but some of them complicate discussions over the future of obsolescence and e-waste. Many gamers actively work to forestall the obsolescence of their games: they invest time in the play of older games (“retrogaming”) they donate labor and creative energy to the production of user-generated content as a means of sustaining involvement in gaming communities; and they produce entirely new game experiences for other users, based on existing software and hardware modifications known as 'mods'. With Guitar Hero and other 'rhythm' games it would be easy to argue that the hardware components of this genre have only one future: as waste. Alternatively, we could consider the actual lifespan of these objects (including their impact as e-waste) and the roles they play in the performances and practices of communities of gamers. For example, the Elmo Guitar Hero controller mod, the Tesla coil Guitar Hero controller interface, the Rock Band Speak n' Spellbinder mashup, the multiple and almost sacrilegious Fender guitar hero mods, the Guitar Hero Portable Turntable Mod and MAKE magazine's Trumpet Hero all indicate a significant diversity of user innovation, community formation and individual investment in the post-retail life of computer and video game hardware. Obsolescence is not just a problem for the games industry but for the computing and electronics industries more broadly as direct contributors to the social and environmental cost of electrical waste and obsolete electrical equipment. Planned obsolescence has long been the experience of gamers and computer users, as the basis of a utopian mythology of upgrades (Dovey and Kennedy). For PC users the upgrade pathway is traversed by the consumption of further hardware and software post initial purchase in a cycle of endless consumption, acquisition and waste (as older parts are replaced and eventually discarded). The accumulation and disposal of these cultural artefacts does not devalue or accrue in space or time at the same rate (Straw) and many users will persist for years, gradually upgrading and delaying obsolescence and even perpetuate the circulation of older cultural commodities. Flea markets and secondhand fairs are popular sites for the purchase of new, recent, old, and recycled computer hardware, and peripherals. Such practices and parallel markets support the strategies of 'making do' described by De Certeau, but they also continue the cycle of upgrade and obsolescence, and they are still consumed as part of the promise of the 'new', and the desire of a purchase that will finally 'fix' the users' computer in a state of completion (29). The planned obsolescence of new media technologies is common, but its success is mixed; for example, support for Microsoft's operating system Windows XP was officially withdrawn in April 2009 (Robinson), but due to the popularity in low cost PC 'netbooks' outfitted with an optimised XP operating system and a less than enthusiastic response to the 'next generation' Windows Vista, XP continues to be popular. Digital Distribution: A Solution? Gamers may be able to reduce the accumulation of e-waste by supporting the disintermediation of the games retail sector by means of online distribution. Disintermediation is the establishment of a direct relationship between the creators of content and their consumers through products and services offered by content producers (Flew 201). The move to digital distribution has already begun to reduce the need to physically handle commodities, but this currently signals only further support of planned, stylistic and technological obsolescence, increasing the rate at which the commodities for recording, storing, distributing and exhibiting digital content become e-waste. Digital distribution is sometimes overlooked as a potential means for promoting communities of user practice dedicated to e-waste reduction, at the same time it is actively employed to reduce the potential for the unregulated appropriation of content and restrict post-purchase sales through Digital Rights Management (DRM) technologies. Distributors like Amazon.com continue to pursue commercial opportunities in linking the user to digital distribution of content via exclusive hardware and software technologies. The Amazon e-book reader, the Kindle, operates via a proprietary mobile network using a commercially run version of the wireless 3G protocols. The e-book reader is heavily encrypted with Digital Rights Management (DRM) technologies and exclusive digital book formats designed to enforce current copyright restrictions and eliminate second-hand sales, lending, and further post-purchase distribution. The success of this mode of distribution is connected to Amazon's ability to tap both the mainstream market and the consumer demand for the less-than-popular; those books, movies, music and television series that may not have been 'hits' at the time of release. The desire to revisit forgotten niches, such as B-sides, comics, books, and older video games, suggests Chris Anderson, linked with so-called “long tail” economics. Recently Webb has queried the economic impact of the Long Tail as a business strategy, but does not deny the underlying dynamics, which suggest that content does not obsolesce in any straightforward way. Niche markets for older content are nourished by participatory cultures and Web 2.0 style online services. A good example of the Long Tail phenomenon is the recent case of the 1971 book A Lion Called Christian, by Anthony Burke and John Rendall, republished after the author's film of a visit to a resettled Christian in Africa was popularised on YouTube in 2008. Anderson's Long Tail theory suggests that over time a large number of items, each with unique rather than mass histories, will be subsumed as part of a larger community of consumers, including fans, collectors and everyday users with a long term interest in their use and preservation. If digital distribution platforms can reduce e-waste, they can perhaps be fostered by to ensuring digital consumers have access to morally and ethically aware consumer decisions, but also that they enjoy traditional consumer freedoms, such as the right to sell on and change or modify their property. For it is not only the fixation on the 'next generation' that contributes to obsolescence, but also technologies like DRM systems that discourage second hand sales and restrict modification. The legislative upgrades, patches and amendments to copyright law that have attempted to maintain the law's effectiveness in competing with peer-to-peer networks have supported DRM and other intellectual property enforcement technologies, despite the difficulties that owners of intellectual property have encountered with the effectiveness of DRM systems (Moore, Creative). The games industry continues to experiment with DRM, however, this industry also stands out as one of the few to have significantly incorporated the user within the official modes of production (Moore, Commonising). Is the games industry capable (or willing) of supporting a digital delivery system that attempts to minimise or even reverse software and hardware obsolescence? We can try to answer this question by looking in detail at the biggest digital distributor of PC games, Steam. Steam Figure 1: The Steam Application user interface retail section Steam is a digital distribution system designed for the Microsoft Windows operating system and operated by American video game development company and publisher, Valve Corporation. Steam combines online games retail, DRM technologies and internet-based distribution services with social networking and multiplayer features (in-game voice and text chat, user profiles, etc) and direct support for major games publishers, independent producers, and communities of user-contributors (modders). Steam, like the iTunes games store, Xbox Live and other digital distributors, provides consumers with direct digital downloads of new, recent and classic titles that can be accessed remotely by the user from any (internet equipped) location. Steam was first packaged with the physical distribution of Half Life 2 in 2004, and the platform's eventual popularity is tied to the success of that game franchise. Steam was not an optional component of the game's installation and many gamers protested in various online forums, while the platform was treated with suspicion by the global PC games press. It did not help that Steam was at launch everything that gamers take objection to: a persistent and initially 'buggy' piece of software that sits in the PC's operating system and occupies limited memory resources at the cost of hardware performance. Regular updates to the Steam software platform introduced social network features just as mainstream sites like MySpace and Facebook were emerging, and its popularity has undergone rapid subsequent growth. Steam now eclipses competitors with more than 20 million user accounts (Leahy) and Valve Corporation makes it publicly known that Steam collects large amounts of data about its users. This information is available via the public player profile in the community section of the Steam application. It includes the average number of hours the user plays per week, and can even indicate the difficulty the user has in navigating game obstacles. Valve reports on the number of users on Steam every two hours via its web site, with a population on average between one and two million simultaneous users (Valve, Steam). We know these users’ hardware profiles because Valve Corporation makes the results of its surveillance public knowledge via the Steam Hardware Survey. Valve’s hardware survey itself conceptualises obsolescence in two ways. First, it uses the results to define the 'cutting edge' of PC technologies and publishing the standards of its own high end production hardware on the companies blog. Second, the effect of the Survey is to subsequently define obsolescent hardware: for example, in the Survey results for April 2009, we can see that the slight majority of users maintain computers with two central processing units while a significant proportion (almost one third) of users still maintained much older PCs with a single CPU. Both effects of the Survey appear to be well understood by Valve: the Steam Hardware Survey automatically collects information about the community's computer hardware configurations and presents an aggregate picture of the stats on our web site. The survey helps us make better engineering and gameplay decisions, because it makes sure we're targeting machines our customers actually use, rather than measuring only against the hardware we've got in the office. We often get asked about the configuration of the machines we build around the office to do both game and Steam development. We also tend to turn over machines in the office pretty rapidly, at roughly every 18 months. (Valve, Team Fortress) Valve’s support of older hardware might counter perceptions that older PCs have no use and begins to reverse decades of opinion regarding planned and stylistic obsolescence in the PC hardware and software industries. Equally significant to the extension of the lives of older PCs is Steam's support for mods and its promotion of user generated content. By providing software for mod creation and distribution, Steam maximises what Postigo calls the development potential of fan-programmers. One of the 'payoffs' in the information/access exchange for the user with Steam is the degree to which Valve's End-User Licence Agreement (EULA) permits individuals and communities of 'modders' to appropriate its proprietary game content for use in the creation of new games and games materials for redistribution via Steam. These mods extend the play of the older games, by requiring their purchase via Steam in order for the individual user to participate in the modded experience. If Steam is able to encourage this kind of appropriation and community support for older content, then the potential exists for it to support cultures of consumption and practice of use that collaboratively maintain, extend, and prolong the life and use of games. Further, Steam incorporates the insights of “long tail” economics in a purely digital distribution model, in which the obsolescence of 'non-hit' game titles can be dramatically overturned. Published in November 2007, Unreal Tournament 3 (UT3) by Epic Games, was unappreciated in a market saturated with games in the first-person shooter genre. Epic republished UT3 on Steam 18 months later, making the game available to play for free for one weekend, followed by discounted access to new content. The 2000 per cent increase in players over the game's 'free' trial weekend, has translated into enough sales of the game for Epic to no longer consider the release a commercial failure: It’s an incredible precedent to set: making a game a success almost 18 months after a poor launch. It’s something that could only have happened now, and with a system like Steam...Something that silently updates a purchase with patches and extra content automatically, so you don’t have to make the decision to seek out some exciting new feature: it’s just there anyway. Something that, if you don’t already own it, advertises that game to you at an agreeably reduced price whenever it loads. Something that enjoys a vast community who are in turn plugged into a sea of smaller relevant communities. It’s incredibly sinister. It’s also incredibly exciting... (Meer) Clearly concerns exist about Steam's user privacy policy, but this also invites us to the think about the economic relationship between gamers and games companies as it is reconfigured through the private contractual relationship established by the EULA which accompanies the digital distribution model. The games industry has established contractual and licensing arrangements with its consumer base in order to support and reincorporate emerging trends in user generated cultures and other cultural formations within its official modes of production (Moore, "Commonising"). When we consider that Valve gets to tax sales of its virtual goods and can further sell the information farmed from its users to hardware manufacturers, it is reasonable to consider the relationship between the corporation and its gamers as exploitative. Gabe Newell, the Valve co-founder and managing director, conversely believes that people are willing to give up personal information if they feel it is being used to get better services (Leahy). If that sentiment is correct then consumers may be willing to further trade for services that can reduce obsolescence and begin to address the problems of e-waste from the ground up. Conclusion Clearly, there is a potential for digital distribution to be a means of not only eliminating the need to physically transport commodities but also supporting consumer practices that further reduce e-waste. For an industry where only a small proportion of the games made break even, the successful relaunch of older games content indicates Steam's capacity to ameliorate software obsolescence. Digital distribution extends the use of commercially released games by providing disintermediated access to older and user-generated content. For Valve, this occurs within a network of exchange as access to user-generated content, social networking services, and support for the organisation and coordination of communities of gamers is traded for user-information and repeat business. Evidence for whether this will actively translate to an equivalent decrease in the obsolescence of game hardware might be observed with indicators like the Steam Hardware Survey in the future. The degree of potential offered by digital distribution is disrupted by a range of technical, commercial and legal hurdles, primary of which is the deployment of DRM, as part of a range of techniques designed to limit consumer behaviour post purchase. While intervention in the form of legislation and radical change to the insidious nature of electronics production is crucial in order to achieve long term reduction in e-waste, the user is currently considered only in terms of 'ethical' consumption and ultimately divested of responsibility through participation in corporate, state and civil recycling and e-waste management operations. The message is either 'careful what you purchase' or 'careful how you throw it away' and, like DRM, ignores the connections between product, producer and user and the consumer support for environmentally, ethically and socially positive production, distribrution, disposal and recycling. This article, has adopted a different strategy, one that sees digital distribution platforms like Steam, as capable, if not currently active, in supporting community practices that should be seriously considered in conjunction with a range of approaches to the challenge of obsolescence and e-waste. Abstract:

In January of 1908 H. Addington Bruce, a writer for the North American Review, observed that "On every street, at every corner, we meet the neurasthenics" (qtd. in Lears, 50). "Discovered" by the neurologist George M. Beard in 1880, neurasthenia was a nervous disorder characterized by a "lack of nerve force" and comprised of a host of neuroses clustered around an overall paralysis of the will. Historian Barbara Will notes that there were "thousands of men and women at the turn of the century who claimed to be ‘neurasthenics,’" among them Theodore Roosevelt, Edith Wharton, William and Henry James, and Beard himself. These neurasthenics had free roam over the American psychiatric landscape from the date of Beard’s diagnosis until the 1920s, when more accurate diagnostic tools began to subdivide the nearly uninterpretably wide variety of symptoms falling under the rubric of "neurasthenic." By then, however, nearly every educated American had suffered from (or known someone who had) the debilitating "disease"--including Willa Cather, who in The Professor’s House would challenge her readers to acknowledge and engage with the cultural phenomenon of neurasthenia. Cultural historian T.J. Jackson Lears, long a student of neurasthenia, defines it as an "immobilizing, self-punishing depression" stemming from "endless self-analysis" and "morbid introspection" (47, 49). What is especially interesting about the disease, for Lears and other scholars, is that it is a culture-bound syndrome, predicated not upon individual experience, but upon the cultural and economic forces at play during the late nineteenth century. Barbara Will writes that neurasthenia was "double-edged": "a debilitating disease and [...] the very condition of the modern American subject" (88). Interestingly, George Beard attributed neurasthenia to the changes wracking his culture: Neurasthenia is the direct result of the five great changes of modernity: steam power, the periodical press, the telegraph, the sciences, and the mental activity of women. (qtd. in Will, 94) For Beard, neurasthenia was a peculiarly modern disease, the result of industrialization and of the ever-quickening pace of commercial and intellectual life. Jackson Lears takes Beard’s attribution a step further, explaining that "as larger frameworks of meaning weakened, introspection focused on the self alone and became ‘morbid’" (49). These frameworks of meaning--religious, political, psychosexual--were under steady assault in Beard’s time from commodifying and secularizing movements in America. Self-scrutiny, formerly yoked to Protestant salvation (and guilt), became more insular and isolating, resulting in the ultimate modern malady, neurasthenia. While Willa Cather may have inherited Beard’s and her culture’s assumptions of illness, it ultimately appears that Cather’s depiction of neurasthenia is a highly vexed one, both sympathetic and troubled, reflecting a deep knowledge of the condition and an ongoing struggle with the rationalization of scientific psychology. As an intellectual, she was uniquely positioned to both suffer from the forces shaping the new disease and to study them with a critical eye. Godfrey St. Peter, the anxious protagonist of The Professor’s House, becomes then a character that readers of Cather’s day would recognize as a neurasthenic: a "brain-worker," hard-charging and introspective, and lacking in what Beard would call "nerve force," the psychological stoutness needed to withstand modernity’s assault on the self. Moreover, St. Peter is not a lone sufferer, but is instead emblematic of a culture-wide affliction--part of a larger polity constantly driven to newer heights of production, consumption, and subsequent affliction. Jackson Lears theorizes that "neurasthenia was a product of overcivilization" (51), of consumer culture and endemic commodification. Beard himself characterized neurasthenia as an "American disease," a malady integral to the rationalizing, industrializing American economy (31). Cather reinforces the neurasthenic’s exhaustion and inadequacy as St. Peter comes across his wife flirting with Louis Marsellus, prompting the professor to wonder, "Beaux-fils, apparently, were meant by Providence to take the husband’s place when husbands had ceased to be lovers" (160). Not only does this point to the sexual inadequacy and listlessness characteristic of neurasthenia, but the diction here reinforces the modus operandi of the commodity culture--when an old model is used up, it is simply replaced by a newer, better model. Interestingly, Cather’s language itself often mirrors Beard’s. St. Peter at one point exclaims to Lillian, in a beatific reverie: "I was thinking [...] about Euripides; how, when he was an old man, he went and lived in a cave by the sea, and it was thought queer, at the time. It seems that houses had become insupportable to him" (156). The Professor’s "symptom of hopelessness," Beard might explain, "appears to be similar to that of morbid fear--an instinctive consciousness of inadequacy for the task before us. We are hopeless because our nerve force is so reduced that the mere holding on to life seems to be a burden too heavy for us" (49). Both Beard and Cather, then, zero in on the crushing weight of modern life for the neurasthenic. The Professor here aches for rest and isolation--he, in Beard’s language, "fears society," prompting Lillian to fear that he is "’becoming lonely and inhuman’" (162). This neurasthenic craving for isolation becomes much more profound in Book III of the novel, when St. Peter is almost completely estranged from his family. Although he feels he loves them, he "could not live with his family again" upon their return from Europe (274). "Falling out, for him, seemed to mean falling out of all domestic and social relations, out of his place in the human family, indeed" (275). St. Peter’s estrangement is not only with his family (an estrangement perhaps rationalized by the grasping or otherwise distasteful St. Peter clan), but with the human family. It is a solipsistic retreat from contact and effort, the neurasthenic’s revulsion for work of any kind. Neurasthenia, if left untreated, can become deadly. Beard explains: "A certain amount of nerve strength is necessary to supply the courage requisite for simple existence. Abstaining from dying demands a degree of force" (49). Compare this to the scene near the end of the narrative in which St. Peter, sleeping on the couch, nearly dies: When St. Peter at last awoke, the room was pitch-black and full of gas. He was cold and numb, felt sick and rather dazed. The long-anticipated coincidence had happened, he realized. The storm had blown the stove out and the window shut. The thing to do was to get up and open the window. But suppose he did not get up--? How far was a man required to exert himself against accident? [...] He hadn’t lifted his hand against himself--was he required to lift it for himself? (276) This classic scene, variously read as a suicide attempt or as an accident, can be understood as the neurasthenic’s complete collapse. The Professor’s decision is made solely in terms of effort; this is not a moral or philosophical decision, but one of physiological capacity. He is unwilling to "exert" the energy necessary to save himself, unwilling to "lift his hand" either for or against himself. Here is the prototypical neurasthenic fatigue--almost suicidal, but ultimately too passive and weak to even take that course of action. Accidental gassing is a supremely logical death for the neurasthenic. This appropriateness is reinforced by the Professor at the end of the narrative, when he remembers his near death: Yet when he was confronted by accidental extinction, he had felt no will to resist, but had let chance take its way, as it had done with him so often. He did not remember springing up from the couch, though he did remember a crisis, a moment of acute, agonized strangulation. (282) Again, the Professor is a passive figure, couch-ridden, subject to the whims of chance and his own lack of nerve. He is saved by Augusta, though, and does somehow manage to carry on with his life, if in a diminished way. We cannot accredit his survival to clinical treatment of neurasthenia, but perhaps his vicarious experience on the mesa with Tom Outland can account for his fortitude. Treatment of neurasthenia, according to Tom Lutz, "aimed at a reconstitution of the subject in terms of gender roles" (32). S. Weir Mitchell, a leading psychiatrist of the day, treated many notable neurasthenics. Female patients, in line with turn-of-the-century models of female decorum, were prescribed bed rest for up to several months, and were prohibited from all activity and visitors. (Charlotte Perkins Gilman’s "The Yellow Wallpaper" has long been considered a critique of Mitchell’s "rest cure" for women. Interestingly, St. Peter’s old study has yellow wall paper.) Treatments for men, again consistent with contemporary gender roles, emphasized vigorous exercise, often in natural settings: Theodore Roosevelt, Thomas Eakins, Frederic Remington, and Owen Wister were all sent to the Dakotas for rough-riding exercise cures [...] Henry James was sent to hike in the Alps, and William James continued to prescribe vigorous mountain hikes for himself[.] (32) Depleted of "nerve force," male neurasthenics were admonished to replenish their reserves in rugged, survivalist outdoor settings. Beard documents the treatment of one "Mr. O," whom, worn out by "labor necessitated by scholarly pursuits," is afflicted by a settled melancholia, associated with a morbid and utterly baseless fear of financial ruin...he was as easily exhausted physically as mentally. He possessed no reserve force, and gave out utterly whenever he attempted to overstep the bounds of the most ordinary effort. [As part of his treatment] He journeyed to the West, visited the Yellowstone region, and at San Francisco took steamer for China [...] and returned a well man, nor has he since relapsed into his former condition. (139-41) Beard’s characterization of "Mr. O" is fascinating in several ways. First, he is the prototypical neurasthenic--worn out, depressed, full of "baseless" fears. More interestingly, for the purposes of this study, part of the patient’s cure is effected in the "Yellowstone region," which would ultimately be made a national park by neurasthenic outdoors man Theodore Roosevelt. This natural space, hewn from the wilds of the American frontier, is a prototypical refuge for nervous "brain-workers" in need of rejuvenation. This approach to treatment is especially intriguing given the setting of Book II of The Professor's House: an isolated Mesa in the Southwest. While St. Peter himself doesn’t undertake an exercise cure, "Tom Outland’s Story" does mimic the form and rhetoric of treatment for male neurasthenics, possibly accounting for the odd narrative structure of the novel. Cather, then, not only acknowledges the cultural phenomenon of neurasthenia, but incorporates it in the structure of the text. Outland’s experience on the mesa (mediated, we must remember, by the neurasthenic St. Peter, who relates the tale) is consistent with what Jackson Lears has termed the "cult of strenuousity" prevalent in the late nineteenth and early twentieth century. According to Lears neurasthenics often sought refuge in "a vitalistic cult of energy and process; and a parallel recovery of the primal, irrational sources in the human psyche, forces which had been obscured by the evasive banality of modern culture" (57). Outland, discovering the mesa valley for the first time, explains that the air there "made my mouth and nostrils smart like charged water, seemed to go to my head a little and produce a kind of exaltation" (200). Like Roosevelt and other devotees of the exercise cure, Outland (and St. Peter, via the mediation) is re-"charged" by the primal essence of the mesa. The Professor later laments, "his great drawback was [...] the fact that he had not spent his youth in the great dazzling South-west country which was the scene of his explorers’ adventures" (258). Interestingly, Outland’s rejuvenation on the mesa is cast by Cather in hyperbolically masculine terms. The notoriously phallic central tower of the cliff city, for instance, may serve as a metaphor for recovered sexual potency: It was beautifully proportioned, that tower, swelling out to a larger girth a little above the base, then growing slender again. There was something symmetrical and powerful about the swell of the masonry. The tower was the fine thing that held all the jumble of houses together and made them mean something. It was red in color, even on that grey day. (201) Neurasthenics embraced "premodern symbols as alternatives to the vagueness of liberal Protestantism or the sterility of nineteenth-century positivism" (Lears xiii). The tower stands in striking contrast to St. Peter’s sexless marriage with Lillian, potentially reviving the Professor’s sagging neurasthenic libido. The tower also serves, in Outland’s mind, to forge meaning out of the seemingly random cluster of houses: "The notion struck me like a rifle ball that this mesa had once been like a bee-hive; it was full of little cluff-hung villages, it had been the home of a powerful tribe" (202). Outland’s discovery, cast in martial terms ("rifle ball"), reinscribes the imperialistic tendencies of the exercise cure and of Tom’s archeological endeavor itself. Tom Lutz notes that the exercise cure, steeped in Rooseveltian rhetoric, exemplified "a polemic for cultural change, a retraining, presented as a ‘return’ to heroic, natural, and manly values...The paternalism of Roosevelt’s appeal made sense against the same understanding of role which informed the cures for neurasthenia" (36). Outland seems to unconsciously concur, reflecting that "Wherever humanity has made that hardest of all starts and lifted itself out of mere brutality, is a sacred spot" (220-1). While Outland does have genuine admiration for the tribe, his language is almost always couched in terms of martial struggle, of striving against implacable odds. On a related note, George Kennan, writing in a 1908 McClure’s Magazine edited by Cather, proposed that rising suicide rates among the educated by cured by a "cultivation of what may be called the heroic spirit" (228). Cather was surely aware of this masculinizing, imperializing response to neurasthenic ennui--her poem, "Prairie Dawn," appears at the end of Kennan’s article! Outland’s excavation of Cliff City and its remains subsequently becomes an imperializing gesture, in spite of his respect for the culture. What does this mean, though, for a neurasthenic reading of The Professor’s House? In part, it acknowledges Cather’s response to and incorporation of a cultural phenomenon into the text in question. Additionally, it serves to clarify Cather’s critique of masculinist American culture and of the gendered treatment of neurasthenia. This critique is exemplified by Cather’s depiction of "Mother Eve": "Her mouth was open as if she were screaming, and her face, through all those years, had kept a look of terrible agony" (214-15). Not only does this harrowing image undermine Outland’s romantic depiction of the tribe, but it points to the moral bankruptcy of the cult of strenuousity. It is easy, Cather seems to argue, for Roosevelt and his ilk to "rough it" in the wilderness to regain their vigor, but the "real-life" wilderness experience is a far harsher and more dangerous prospect. Cather ultimately does not romanticize the mesa--she problematizes it as a site for neurasthenic recovery. More importantly, this vexed reading of the treatment suggests a vexed reading of neurasthenia and of "American Nervousness" itself. Ultimately, in spite of his best efforts to recover the intense experience of his past and of Tom Outland’s, St. Peter fails. As Mathias Schubnell explains, Cather’s "central character is trapped between a modern urban civilization to which he belongs against his will, and a pastoral, earth-bound world he yearns for but cannot regain" (97). This paradox is exemplified by the Professor’s early lament to Lillian, "’it’s been a mistake, our having a family and writing histories and getting middle-aged. We should have been picturesquely shipwrecked together when we were young’" (94). The reader, of course, recognizes the absurdity of this image--an absurdity strongly reinforced by the image of the deceased "Mother Eve" figure. These overcivilized men, Cather suggests, have no conception of what intense experience might be. That experience has been replaced, the Professor explains, by rationalizing, industrializing forces in American culture: Science hasn’t given us any new amazements, except of the superficial kind we get from witnessing dexterity and sleight-of-hand. It hasn’t given us any richer pleasures...nor any new sins--not one! Indeed, it has taken our old ones away. It’s the laboratory, not the Lamb of God, that taketh away the sins of the world. You’ll agree there is not much thrill about a physiological sin...I don’t think you help people by making their conduct of no importance--you impoverish them. (68) St. Peter, the neurasthenic humanist, gets here at the heart of his (and America’s) sickness--it has replaced the numinous and the sacred with the banal and the profane. The disorder he suffers from, once termed a sin, has become "physiological," as has his soul. It is worthwhile to contrast the Professor’s lament with Beard’s supremely rational boast: "It would seem, indeed, that diseases which are here described represent a certain amount of force in the body which, if our knowledge of physiological chemistry were more precise, might be measured in units" (115). The banal, utterly practical measuring of depression, of melancholia, of humanity’s every whim and caprice, Cather suggests, has dulled the luster of human existence. The Professor’s tub, then, becomes an emblem of the relentless stripping away of all that is meaningful and real in Cather’s culture: "Many a night, after blowing out his study lamp, he had leaped into that tub, clad in his pyjamas, to give it another coat of some one of the many paints that were advertised to behave like porcelain, but didn’t" (12). Porcelain here becomes the religion or art which once sustained the race, replaced by the false claims of science. The Professor, though, seems too world-weary, too embittered to actually turn to religious faith. Perhaps God is dead in his world, eliminated by the Faustian quest for scientific knowledge. "His career, his wife, his family, were not his life at all, but a chain of events which had happened to him" (264). Godfrey St. Peter, like the rest of the neurasthenics, is doomed to an incurable sickness, victim of a spiritual epidemic which, Cather suggests, will not soon run its course. Abstract:

Maize (Zea mays L.) is a cereal crop of great economic importance in Italy; production is currently of 62,587,469 t, with an area that covers 628,801 ha, concentrated in northern Italy (ISTAT 2020). Fusarium species are associated with root and crown rot causing failures in crop establishment under high soil moisture. In 2019 maize seedlings collected in a farm located in San Zenone degli Ezzelini (VI, Italy) showed root and crown rot symptoms with browning of the stem tissues, wilting of the seedling, and collapsing due to the rotting tissues at the base of the stem. The incidence of diseased plants was approximately 15%. Seedlings were cleaned thoroughly from soil residues under tap water. Portions (about 3-5 mm) of tissue from roots and crowns of the diseased plants were cut and surface disinfected with a water solution of NaClO at 0.5% for 2 minutes and rinsed in sterile H20. The tissue fragments were plated on Potato Dextrose Agar (PDA) amended with 50 mg/l of streptomycin sulfate and incubated for 48-72 hours at 25oC. Over the 80 tissue fragments plated, 5% were identified as Fusarium verticillioides, 60% as Fusarium spp., 35% developed saprophytes. Fusarium spp. isolates that showed morphological characteristics not belonging to known pathogenic species on maize were selected and used for further investigation while species belonging to F. oxysporum were discarded. Single conidia of the Fusarium spp. colonies were cultured on PDA and Carnation Leaf Agar (CLA) for pathogenicity tests, morphological and molecular identification. The colonies showed white to pink, abundant, densely floccose to fluffy aerial mycelium. Colony reverse showed light violet pigmentation, in rings on PDA. On CLA the isolates produced slightly curved macronidia with 3 septa 28.1 - 65.5 µm long and 2.8-6.3 µm wide (n=50). Microconidia were cylindrical, aseptate, 4.5 -14.0 µm long and 1.5-3.9 µm wide (n=50). Spherical clamydospores were 8.8 ± 2.5 µm size (n=30), produced singly or in pairs on the mycelium, according to the description by Skovgaard et al. (2003) for F. commune. The identity of two single-conidia strains was confirmed by sequence comparison of the translation elongation factor-1α (tef-1α), and RNA polymerase II subunit (rpb2) gene fragments (O’Donnell et al. 2010). BLASTn searches of GenBank, and Fusarium-ID database, using the partial tef-1α (MW419921, MW419922) and rpb2 (MW419923, MW419924) sequences of representative isolate DB19lug07 and DB19lug20, revealed 99% identity for tef-1α and 100% identity to F. commune NRRL 28387(AF246832, AF250560). Pathogenicity tests were carried out by suspending conidia from a 10-days old culture on PDA in sterile H2O to 5×104 CFU/ml. Fifty seeds were immersed in 50 ml of the conidial suspension of each isolate for 24 hours and in sterile water (Koch et al. 2020). The seeds were drained, dried at room temperature, and sown in trays filled with a steamed mix of white peat and perlite, 80:20 v/v, and maintained at 25°C and RH of 80-85% for 14 days with 12 hours photoperiod. Seedlings were extracted from the substrate, washed under tap water, and observed for the presence of root and crown rots like the symptoms observed on the seedlings collected in the field. Control seedlings were healthy and F. commune was reisolated from the symptomatic ones and identified by resequencing of tef-1α gene. F. commune has been already reported on maize (Xi et al. 2019) and other plant species, like soybean (Ellis et al. 2013), sugarcane (Wang et al. 2018), potato (Osawa et al. 2020), indicating that some attention must be paid in crop rotation and residue management strategies. Abstract:

IntroductionThis article explores the work of lists in mediating the materiality and complexity of everyday life. In contemporary cultural contexts the endless proliferation of listing forms and practices takes on a “self-reflexivity” that signals their functional and productive role in negotiating the everyday. Grocery lists, to do lists, and other fragmentary notes work as personal tools for ordering and managing daily needs and activities. But what do these fragments tell us about the work of lists? Do they “merely” describe or provide analytical insight into the everyday? To address these questions we explore the issues and anxieties raised by everyday consumption drawing on theories of everyday life. These concerns, which are examined in detail in the second part of the paper, lie at the heart of French writer Georges Perec’s interest in the “infra-ordinary”—that which resides within the everyday. In the parts of his writing that he designated in retrospect as “sociological,” Perec takes the form and function of lists as a starting point for a range of literary experiments that work as tools of discovery and invention capable in their seeming banality of both mapping and disrupting everyday life. Les Choses (Things) and Je Me Souviens (I Remember), for example, take the form of endless and repetitious lists of things, places, people, and memories, collections of fragments that aim to achieve a new kind of sociology of everyday life. While this project may be contentious in terms of its “representativeness,” as a discursive method or mode of ethnographic practice (Becker) it points to the generative power of lists as both of the everyday and as an analytical tool of discovery for understanding the everyday. Perec’s sociology of the everyday is not, we argue, articulated as a form of a cohesive or generalizable characterisation of social institutions, but rather emerges as an “invent-ory” of the rich texture and disjunctures that populated his everyday spaces, personal encounters, and memories. Lists and the EverydayTo see lists as tools of common use, to paraphrase Spufford (2), is to place the list squarely within the realm of the everyday. A particular feature of the everyday—its “special quality,” as Highmore puts it—is that it is characterised by “the unnoticed, the inconspicuous, the unobtrusive” (Highmore 1). The everyday is enigmatic, elusive, difficult to grasp, and important because of this. In Maurice Blanchot’s famous formulation, “whatever its other aspects, the everyday has this essential trait: it allows no hold. It escapes” (14). Its pervasiveness renders it as platitude, but, as Blanchot adds, “this banality is also what is most important, if it brings us back to existence in its very spontaneity and as it is lived” (13). This tension poses special challenges for critics of the everyday who must register it as a part of, as inhering in, “manifold lived experience” without it “dissolving” into “statistics, properties, data” when it is “made the object of study” (Sheringham 360). In short, as Fran Martin (2) points out, “even though it surrounds us completely and takes up the vast majority of our time, the everyday is extremely difficult to pin down.” It is a predicament that is made all the more difficult in light of the complicated entanglement of the everyday and consumer capitalism (Jagose; Lury; Schor and Holt). This close relationship between consumer objects—things—and everyday life (along with other historical factors), has profoundly shifted critical understanding of the processes of subject formation and identity performance. One influential formulation of these transformations, associated most strongly with the work of Giddens and Beck, is captured in the notion of “reflexive modernity.” This refers to the understanding that, increasingly, at a broader societal level, “the very idea of controllability, certainty or security” is being challenged (Beck, World Risk Society 2)—developments that impact directly on how self-identity is formed (Giddens), reformed and performed (Hall). Faced with such upheavals, it is suggested that the individual increasingly “must produce, stage and cobble together their biographies themselves” (Beck, “Reinvention” 13), they must self-reflexively “invent” themselves. As Slater puts it, individuals, by force of circ*mstance, are required to “choose, construct, interpret, negotiate, display who they are to be seen as” (84) using a wide array of resources, both material and symbolic. Consumerism, it is widely argued, proffers its goods as solutions to these problems of identity (Slater 85). For instance, Adam Arvidsson notes how goods are used in the construction of “social relations, shared emotions, personal identity or forms of community” (18). This is particularly the case in relation to lifestyle consumption, which for Chaney (11) functions as a response to the loss of meaning in modern life following the sorts of larger societal upheavals described by Giddens and Beck and others. The general implication of lifestyle consumption across its various forms is that “‘every choice’ […] all acts of purchase or consumption, […] ‘are decisions not only about how to act but who to be’” (Warde in Slater 85). It is here that we can place the contemporary work of lists and the proliferation of list forms and practices. Lists figure in vital ways within this context of consumer-based everyday life. At a general level, lists assist us in making sense of the activities, objects, and experiences that feed and constitute daily life. In this sense, the list is a crucial mediating device, a means of organising things and bringing the mundanities and the exigencies of the everyday under control:The list categorises the ongoing chores of everyday life: organising and managing shopping, work, laundry, meetings, parking fines, and body management. (Crewe 33)In relation to lifestyle consumption, lists and inventories constitute one key way in which “we attempt to organise and order consumption” (Crewe 29). In this sense, lists are, for Louise Crewe, important “scripting devices that help us to manage the mundanity and weighty materiality of consumption” (Crewe 29). The use of the phrase “scripting device” is important here insofar as it suggests a double-movement in which lists simultaneously serve as “devices for regulating and disciplining the consuming body” (that is, lists as “prompts” that encourage us to follow the “script” of consumer culture) and work productively to “narrate practice and desire” (part of the “scripting” of self-identity and performance) (Crewe 30).In developing and illustrating these ideas, Crewe draws on Bill Keaggy’s found shopping lists project. Originally a blog, and subsequently a book entitled Milk Eggs Vodka, Keaggy gathers (and offers humorous commentary on) a wide array of discarded shopping lists that range from the mundane, to the bizarre, to the profound, each, in their own way, surprisingly rich and revealing of the scribes who penned them. Individually, the lists relay, through object names, places, actions, and prompts, the mundane landscape of everyday consumption. For example: Zip lockIceBeerFruit (Keaggy 42) SunglassesShoesBeer$Food (Keaggy 205)Keaggy’s collection comes to life, however, through his own careful organisation of these personal fragments into meaningful categories delineated by various playful and humorous characteristics. This listing of lists performs a certain transformation that works only in accumulation, in the book’s organisation, and through Keaggy’s humorous annotations. That is, Keaggy’s deliberate organisation of the lists into categories that highlight certain features over others, and his own annotations, introduces an element of invention and play, and delivers up many unexpected insights into their anonymous compilers’ lives. This dual process of utilising the list form as a creative and a critical tool for understanding the everyday also lies at the heart of Georges Perec’s literary and sociological project. Georges Perec: Towards an Invent-ory of Everyday LifeThe work of the French experimental writer Georges Perec is particularly instructive in understanding the generative potential of the act of listing. Perec was especially attuned to the effectiveness and significance of lists in revealing what is important in the mundane and quotidian—what he calls the “infra-ordinary” or “endotic” (as opposed to the “extraordinary” and “exotic”). As shall be detailed below, Perec’s creative recuperation of the list form as a textual device and critical tool leads us to a fuller appreciation of how, in Crewe’s words, “the most mundane, ordinary, invisible, and seemingly uninteresting things can be as significant and revealing as the most dramatic” (44).Across Perec’s diverse literary output, lists figure repeatedly in ways that speak directly to their ability to shed light on the inner workings of the everyday—their ability to make the familiar strange (Highmore 12)—and to reveal the entangled interactions between everyday consumption and personal identity. It is in this second sense that lists operate in his novel Things: A Story of the Sixties (Les Choses, 1965), a book that the French philosopher Alain Badiou (20, note 1) describes as a “rigorous literary version of the Marxist theme of alienation—especially the prevalence of things over existence.” Things tells of the endeavours of Sylvie and Jérôme, a young Parisian couple who, in Bourdieu’s terms, attempt to improve their social position in part through the cultural capital resources they see as invested in consumer objects, in the “things” that they acquire and desire. Perec’s telling of this narrative is heavily populated with lists of these semiotically loaded objects of consumer desire, taste, and distinction. The book opens, for example, with a descriptive listing of the kinds of decorative elements that visitors would encounter in the entrance hall of an idealised, imagined Paris apartment the couple longed for:Your eye, first of all, would glide over the grey fitted carpet in the narrow, long and high-ceilinged corridor. Its walls would be cupboards, in light-coloured wood, with fittings of gleaming brass. Three prints, depicting, respectively, the Derby winner Thunderbird, a paddle-steamer named Ville-de-Montereau, and a Stephenson locomotive, would lead to a leather curtain hanging on thick, black, grainy wooden rings which would slide back at the merest touch. (Perec, Things 21) This (and other detailed) listing of idealised objects—which, as the book progresses, are set in stark opposition to their present lived reality—tells the reader a great deal about the two protagonists’ wants and desires (“they both possessed, alas, but a single passion, the passion for a higher standard of living, and it exhausted them”—Perec, Things 35), and wider collective identification with these desires. Indeed, such identifications clearly had wide social resonance in France (and elsewhere) with Things collecting the Prix Renaudot. The ability of lists to speak to collective social (not just individual) experience was also explored by Perec in Je me souviens (1978), a book modelled on a project by Joe Brainard and which comprised a series of personal recollections of largely unremarkable events, which, nevertheless, at the time, had gained some form of purchase within the collective psyche of the French people—in Perec’s words, a random list of “little fragments of the everyday, things which, in such and such a year, everyone more or less the same age has seen, or lived, or share, and which have subsequently disappeared or been forgotten” (cited in Adair 178). For example:(item 57) I remember that Christian Jacque divorced Renée Faure in order to marry Martine Carol.(item 247) I remember that De Gaulle had a brother named Paul who was director of the Foire de Paris. (cited in Adair 179)Both these texts are component parts in a larger project of Perec’s to develop “an anthropology of everyday life” (Perec, “Notes” 142 note §). Howard Becker has offered a challenging, though also somewhat ambivalent, critique of Perec’s “sociological” method in these and other texts, contrasting Perec’s descriptive ethnography with the work that social scientists do. Becker takes aim at the way Perec’s detailed listing of objects, people, events, and memories eschews narrative and sociological design, referring to Perec’s method as “proto-ethnography,” or “detailed ‘raw description’” (73). Yet Becker is also drawn in by the end products of that method: “As you read Perec’s descriptions, you increasingly succumb to the feeling (at least I do, and I think others do as well) that this is important, though you can’t say how” (71). Ultimately, his criticism decries Perec’s failure to impose an explicit order on his lists and fragments, perhaps missing the significance of the way they are always bounded and underpinned by a conceptual principle: “It does not seem to have the kind of cohesion, at least not obviously, that social scientists like to ascribe to a culture, a similarity or interlocking or affinity of the parts to one another…” (74). That is, Perec’s lists stand as fragments, but fragments that do add up to something, as Becker admits: “The whole is more than the parts” (69). This ambivalence points to the analytical potential Perec found within those fragments, the “raw description,” that can only be understood through the end product. It could be argued that his lists defy the very possibility of presenting the everyday as a cohesive whole, and promote instead the everyday in its rich texture, as repetition and disjuncture. This project presents itself, in short, as a sociology of the everyday, whilst subverting the functionalist traditions of sociological observation and classification (Boyne). As Perec asks of the habitual, “How are we to speak of [...] ‘common things,’ how to track them down rather, flush them out, wrest them from the dross in which they remain mired, how to give them a meaning, a tongue [...]?” (Perec, “Approaches” 210). Lists (alongside other forms of description) play a vital role in this project and provide a partial answer to the above questions, and this is why Perec’s lists actively seek out the banal or quotidian. In addition to the examples cited above, fascination with enumeration of this kind is most strikingly realised in his essay, “Attempt at an Inventory of the Liquid and Solid Foodstuffs Ingurgitated by Me in the Course of the Year Nineteen Hundred and Seventy-Four” (Реrес, “Attempt” 244-249), and his later radio broadcast, “An Attempt at а Description of Things Seen at Mabillon Junction on 19 Мау 1978” (Bellos 640). At very least, Perec’s experiments serve as testimony to his ability to transform the trivial into the poetic—list-making as “invent-ory”. Importantly, however, Perec makes the shift from the inventory as a pragmatic listing form, “presenting a simple series of units,” “collected by a conceptual principle” (Belknap 2, 3), to a more transformative or analytical discursive practice. In all the above cases, Perec’s “accumulation is used in conjunction with other forms, devices, and intentions” (Bellos 670), such as, for instance, in the deployment of the list (the “invent-ory”) as an effective lever with which to pry open for inspection the seemingly inscrutable inner workings of everyday spaces, things, memories, in order that they might “speak of what is [and] of what we are” (Perec, “Approaches” 210).In this way, Perec’s use of lists (and various forms of categorisation) can be understood as a critique of the very possibility of stable method applied to classificatory ordering systems. In its place he promotes a set of practices that are oriented towards, and appropriate to, investigations of the everyday, rather than establishing scientific universals. At points in his work Perec expresses discomfort or even anxiety in taking the act of classification as a “method.” He begins his essay “Think/Classify,” for instance, by lamenting the “discursive deficiency” of his own use of classification in grasping the everyday, which at the same time calls “the thinkable and the classifiable into question” (189). And, yet, the act of listing, situated as it is for Perec firmly within the material contexts of particular activities and spaces, ultimately offers a productive means by which to understand, and negotiate, the everyday.ConclusionIn this paper we have examined the everyday work of lists and the functions that they serve in mediating the materiality and complexity of everyday life. In the first section of the paper, following Crewe, we explored the dual function of lists as scripting devices in simultaneously “disciplining” us as consumers as well and as a means of controlling the everyday in ways that also feed our sense of self-identity. In this sense lists are complex devices. Perec was especially attuned to the layers of complexity that attend our engagement with lists. In particular, as we explored in the second part of the paper, Perec saw lists as a critical and productive tool (an invent-ory) and used them to scrutinise common things in the hope that they might “speak of what is [and] of what we are” (Perec, “Approaches” 210). Lists remain, in this sense, an accessible discursive technology often surprising for their subtle revelations about the everyday even while they maintain adherence to an inherently recognisable form.In setting out the importance of his own “project,” and the need to question the habitual, Perec provides a set of instructions (his “pedagogic strategy”—Adair 177), presented as an approach (if not a method), and which signals his desire to critique the traditions of social science as a method of material and social ordering and analysis. Perec’s appropriation of this approach, this discursive technology, also works as a provocation, as a “project” that others might adopt. He prompts his readers to “make an inventory of your pockets, your bag. Ask yourself about the provenance, the use, what will become of each of the objects you take out” (Perec, “Approaches” 210). This is a challenge that was built upon in different ways by a number of writers inspired by the esprit of Perec’s approach to the everyday, associated also with “a wider cultural shift from systems and structures to practices and performances” (Sherringham 292). Sherringham, for instance, traces the “redirection of ethnographic scrutiny from the far to the near” in the work of Augé, Ernaux, Maspero and Réda amongst others (292-359). Abstract:

My father killed the boar when he was 16. He’d dreamed of killing the boar for some time. My father’s brother had killed a boar when he was only fifteen. My father’s brother was five years older than him. Like most big brothers, he treated his little brother with intolerant contempt. He’d been saying for months that my father would never kill a boar. He was too weak. He was a girl. He was useless. And, just the day before, he told him he was so worthless he better finish the fence on the bottom paddock before dusk or he could expect a kicking. The family farm was gradually being cleared from the bush and the fencing slow and arduous. My father finished the fence. My father was very good with his hands and in truth a much better fencer than his brother, which didn’t help matters between them. That night my father didn’t go to sleep in the room he shared with his brother. Instead he went out into the bush past the bottom paddock, where the boars roamed, his rifle strapped over his shoulder and a knife in his ankle scabbard. The cleared ground was rough and uneven, a broken landscape created by the eruptions and outpourings of the volcanoes Ruapehu, Ngauruhoe and Tongariro. In the bush, the terrain was even rougher, jagged rises and deep gullies, all ripe with the verdant vegetation flourishing on the rich volcanic soil. My father found himself a niche in a cliff on the edge of the bush above a small clearing near the creek. He huddled there in his woollen coat and dungarees and waited. He’d brought the dogs with him and they drove the boar out of the bush and into the clearing among the tree ferns just before dawn. By then my father was hunched on a rock, out of the way. The dogs worried the boar. They grabbed its tail, snapped at its balls, sank their teeth into its legs. The boar fought back. It lashed at them with its tusks. It caught one and tossed it into a tree fern, the dog yelping from the pain of its ripped rib cage. The boar roared, stomping and rooting. The dogs continued to circle. My father had waited all night in the cold, his rifle loaded and the safety catch off. My father was a very good shot. Better than his brother. That was why his parents had splurged on his birthday gift and bought him a .303 rifle. His brother had a .22, but he couldn’t shoot pigeons or ducks. My father, though, could use his brother’s gun to bring down a brace of ducks. Another reason his brother treated him like a piece of dirt. But out in the bush he couldn’t shoot the boar for fear of killing one of the dogs. He slipped the catch on and laid the gun down beside him. He took a knife from the scabbard on his belt. He waited until the boar was facing away from him, dogs in front and behind it. He jumped from the rock, and kicked the boar’s right hind leg out. The boar went down. My father threw himself on its back and plunged the knife in between the shoulders. Deep, to cut the spine and throat. The boar squealed, thrashed and subsided. My father thrust himself upright, knife still in blood-soaked hand, and stood away from the boar. The boar rolled over, the dogs still nipping at it. My father used the knife again, slashing deep across the boar’s throat. It screamed and lunged at him with head and tusks. He leapt away, falling over one of the dogs. The boar didn’t die straight away. It thrashed about on the ground, snorting and sighing at first, then whimpering as blood gushed out, steamed on the cold ground and coagulated in the crushed ferns. Eventually it was just panting, and slowly at that. Finally it was dead. My father shooed the dogs away. He cut off the boar’s balls and pizzle and tossed them to the dogs. He slit the boar from arse to belly and began the process of removing its warm innards, first working with the bladder to attempt to keep its contents from having too much contact with his game. His hands reached right inside to disentangle the intestines. His shirt and jacket were soaked with its blood. His hands were greasy with blood and sh*t. He washed himself as best as he could in the freezing water of the creek. He manoeuvred the boar so that it was half sitting on the ground then he lowered himself down and backed between the boar’s front legs, his head under its chin. Taking the weight of the beast on his shoulders, he slowly stood and began to trudge out of the bush and through the rough paddocks towards his family home on the top of the rise. The dogs kept him company for a bit, but the lure of home was too much for them and they took off up the hill in a barking frenzy. All except the one that had been tossed by the boar. It slunk at his heels, blood on its flank where the tusk had ripped through. His father and brother were waiting for him on the veranda. His brother glared and yelled at him because he had missed the morning milking of the cows, but his father told him to take the boar to the meat shack. This was behind the house. It was a rough weatherboard structure on the cool, south-side. It was secure against dogs and vermin and big enough to hang several carcases. A sheep and legs of ham were already there. The shack had a smooth stone floor with drainage channels grooved into it. My father laid the boar on the floor of the shack. He cut the hock of each hind leg just behind the tendon to make a space for the gambrel hook. He inserted the hook then used the hoist in the shack to raise the boar up to the rail that ran down the centre of the room and from which the meat hung. My father then began to skin the boar, stripping back the black bristled outer flesh as much as possible in one piece. Once it was scrubbed of the bristles and tanned, the skin would be soft and supple, suitable for a purse or for covering a saddle. He washed the carcass. Later, when the day’s farm work was over, the whole family would work on preparing and preserving the boar. His mother had already fired up the copper to boil water for the cleaning and salting. Lastly, he sawed off the boar’s head. He placed it on the butcher’s block in the shack and worked at the tusks. On this big beast the tusks were almost five inches long, curved and very sharp. They were much larger than the tusks from his brother’s boar. Once he had the tusks out of the boar’s mouth, he stripped of all but his underpants and washed himself as best as he could at the tap of the water tank at the back of the house. The water was icy and there was a stiff breeze from the snow on the mountains. It was still winter. But my father hardly noticed. He was still warm from the blood of the boar and the sight of his brother’s face when he had seen the size of it. Two months later, he took the tusks into the town of Taumaranui. He sought advice from the jeweller in the main street, who had made a speciality of working with tusks. The jeweller was known all over the King Country. The jeweller talked about how the tusks might be mounted. He suggested a band of gold, edges engraved with delicate leaves, to join the tusks base to base, so that the points formed a semicircle. Just below the points, he suggested two gold bands joined with a delicate gold chain, from which the tusks could be hung. And that is what my father agreed to. The jeweller took one month then my father claimed his tusks and took them home to mount on his bedroom wall, where his brother was forced to see them every day. My father signed up for the Air Force when he was 18. He wanted to fly away from his brother and the cows and the fencing and digging the rocks out of the paddock and that is exactly what he did. He learned to fly, something he’d dreamed of doing, same as he had dreamed of killing a boar. My father was a great dreamer. He left the tusks at home with his mother. She took them out of the bedroom them and placed them on the wall of the family room to remind her of him. His brother would turn them back to front. My father sent home photographs of himself: one from Cairo with him in tropical gear, sparkling eyes and a jaunty smile under his new moustache; another from Waddingham in his Sergeant pilot’s uniform standing with his crew in front of their Lancaster as it is loaded with bombs; a last one from an unknown place but he is wearing his Flying Officer’s uniform for he had been promoted and there are ribbons on his chest, too, but his eyes do not shine and he does not smile. As they arrived from the other side of the world in the slow mail his mother placed these photographs on the sideboard in the family room under my father’s tusks. In a mood after the Sunday roast his brother would turn them face down, saying my father wouldn’t be coming back so why did he have to be reminded of him. But he did come back, which even his brother had to acknowledge. He was 23. He was a shell of the boy who had killed the boar. He had been gutted by the war, though he showed no outward signs of the mutilation. It was all within, deep within, embedded in him like tusks in the jaw of a boar. My father began studying to be a veterinarian when he was 25. As part of his repatriation package, he was paid to study at the University of Sydney. He took the tusks down from his mother’s wall and packed them into one of the suitcases he and my mother took with them on the flying boat to Sydney. The tusks hung on the wall of the semi in Enmore they lived in for the five years he studied. Then after he had graduated they went back across the Tasman and my father began his work with animals. The animals received his ministrations with passive indifference and helped resolve the horror in his head, an unremitting memory of the perilous flights under attack across black skies and terrain, the fires unleashed by the phosphorous bombs released from his plane’s bomb bay let alone the destruction from other ordnance, the morning briefings after what was left of the squadron had returned and he learned which of his mates was no longer. He drank a bit. Maybe too much, but nobody ever sat down with him and talk about what he had been through. He had some medals and his old flying jacket and it was expected that he just get on with life. Which he did, overall. Once my parents were back in New Zealand, he set up practice in Waikato, with dairy cattle his most frequent patients. The Waikato district lies to the north of the King Country where my father had killed the boar. His family were not so far away, but he didn’t visit them that often. His brother was running things down there. His brother held vets in contempt and made that clear on the rare occasions my father did visit. Then his father, my grandfather, died. The farm went to his older brother as was the custom of those times. His widowed mother moved up to Auckland, so my father had no reason to visit the farm or his brother any more. Maybe it was only a matter of moving away from his brother but he lost and found himself in Australia. Maybe it was also the fact that a few years after he had made the move, the phone rang one night and he found he was talking to his brother’s wife. His brother had shot himself down in the bottom paddock that morning. It seems my father’s brother was never a very good farmer. From that time on my father mellowed, relaxed and began to enjoy himself. The tusks, though, were always on his bedside table, reminding him of that night he spent out in the bush and killed the boar. My father died three weeks before he was to turn 80. His death was long and painful to those of us who had to watch it, though for him it was ameliorated by painkillers and palliative care given him. It was my job to arrange the details of his funeral. Since his death was no surprise, all of his family, his three sons and his two daughters, grandsons and grand-daughters and his great grand children as well, had already gathered to say goodbye to him. But everybody was now under pressure to get back to jobs and other commitments. I spoke to the undertakers. They arranged the funeral the day following my father’s death in their own chapel. My mother wanted an open casket so my father had to be dressed in his best clothes. My mother and I selected the clothes and I took them to the undertakers. The next morning, before the ceremony, the undertakers called me and asked me to come to their rooms behind the chapel. They asked me to check that my father looked as much as we wanted him to look. He lay in the coffin, only his head and hands showing, the rest of him expertly trussed and dressed for this last display. His hair was neatly brushed and there was a bristle or two of whiskers on his cheek and chin. His eyes were closed and the skin on his face waxy, but cold from wherever he had been stored. I kissed him on his forehead. Then I placed the tusks on his chest, just under his neck and over the tie and jacket my mother had decided he should wear. My father was ready. I drove my mother down to the chapel just before 2 pm. She and I were the last people to be seated. We were both to sit in the front row. She walked straight up the aisle past the other mourners to my father’s coffin and she stood there for a moment looking at her husband of nearly sixty years. She stretched out her arm and stroked the tusks on his chest. Then she turned and I reached out and guided her to her seat. “He’ll like having them,” she whispered to me. Then we sang “There’s a hole in the bucket”. My father always liked that song. The crematorium was miles away. My father travelled there alone. Just as he had faced the boar. Abstract:

Introduction“From every kind of man obedience I expect; I’m the Emperor of Japan.” (“Miyasama,” from Gilbert and Sullivan’s musical The Mikado, 1885)This commentary is facilitated by—surprisingly resilient—oriental stereotypes of an imagined Japan (think of Oscar Wilde’s assertion, in 1889, that Japan was a European invention). During the Victorian era, in Britain, there was a craze for all things oriental, particularly ceramics and “there was a craze for all things Japanese and no middle class drawing room was without its Japanese fan or teapot.“ (V&A Victorian). These pastoral depictions of the ‘oriental life’ included the figures of men and women in oriental garb, with fans, stilt shoes, kimono-like robes, and appropriate headdresses, engaging in garden-based activities, especially tea ceremony variations (Landow). In fact, tea itself, and the idea of a ceremony of serving it, had taken up a central role, even an obsession in middle- and upper-class Victorian life. Similarly, landscapes with wild seas, rugged rocks and stunted pines, wizened monks, pagodas and temples, and particular fauna and flora (cranes and other birds flying through clouds of peonies, cherry blossoms and chrysanthemums) were very popular motifs (see Martin and Koda). Rather than authenticity, these designs heightened the Western-based romantic stereotypes associated with a stylised form of Japanese life, conducted sedately under rule of the Japanese Imperial Court. In reality, prior to the Meiji period (1868–1912), the Emperor was largely removed from everyday concerns, residing as an isolated, holy figure in Kyoto, the traditional capital of Japan. Japan was instead ruled from Edo (modern day Tokyo) led by the Shogun and his generals, according to a strict Confucian influenced code (see Keene). In Japan, as elsewhere, the presence of feudal-style governance includes policies that determine much of everyday life, including restrictions on clothing (Rall 169). The Samurai code was no different, and included a series of protocols that restricted rank, movement, behaviour, and clothing. As Vincent has noted in the case of the ‘lace tax’ in Great Britain, these restrictions were designed to punish those who seek to penetrate the upper classes through their costume (28-30). In Japan, pre-Meiji sumptuary laws, for example, restricted the use of gold, and prohibited the use of a certain shade of red by merchant classes (V&A Kimono).Therefore, in the governance of pre-globalised societies, the importance of clothing and textile is evident; as Jones and Stallybrass comment: We need to understand the antimatedness of clothes, their ability to “pick up” subjects, to mould and shape them both physically and socially—to constitute subjects through their power as material memories […] Clothing is a worn world: a world of social relations put upon the wearer’s body. (2-3, emphasis added)The significant re-imagining of Japanese cultural and national identities are explored here through the cataclysmic impact of Western ideologies on Japanese cultural traditions. There are many ways to examine how indigenous cultures respond to European, British, or American (hereafter Western) influences, particularly in times of conflict (Wilk). Western ideology arrived in Japan after a long period of isolation (during which time Japan’s only contact was with Dutch traders) through the threat of military hostility and war. It is after this outside threat was realised that Japan’s adoption of military and industrial practices begins. The re-imagining of their national identity took many forms, and the inclusion of a Western-style military costuming as a schoolboy uniform became a highly visible indicator of Japan’s mission to protect its sovereign integrity. A brief history of Japan’s rise from a collection of isolated feudal states to a unified military power, in not only the Asian Pacific region but globally, demonstrates the speed at which they adopted the Western mode of warfare. Gunboats on Japan’s ShorelinesJapan was forcefully opened to the West in the 1850s by America under threat of First Name Perry’s ‘gunboat diplomacy’ (Hillsborough 7-8). Following this, Japan underwent a rapid period of modernisation, and an upsurge in nationalism and military expansion that was driven by a desire to catch up to the European powers present in the Pacific. Noted by Ian Ferguson in Civilization: The West and the Rest, Unsure, the Japanese decided […] to copy everything […] Japanese institutions were refashioned on Western models. The army drilled like Germans; the navy sailed like Britons. An American-style system of state elementary and middle schools was also introduced. (221, emphasis added)This was nothing short of a wide-scale reorganisation of Japan’s entire social structure and governance. Under the Emperor Meiji, who wrested power from the Shogunate and reclaimed it for the Imperial head, Japan steamed into an industrial revolution, achieving in a matter of years what had taken Europe over a century.Japan quickly became a major player-elect on the world stage. However, as an island nation, Japan lacked the essentials of both coal and iron with which to fashion not only industrial machinery but also military equipment, the machinery of war. In 1875 Japan forced Korea to open itself to foreign (read: Japanese) trade. In the same treaty, Korea was recognised as a sovereign nation, separate from Qing China (Tucker 1461). The necessity for raw materials then led to the Sino-Japanese War (1894–95), a conflict between Japan and China that marked the emergence of Japan as a major world power. The Korean Peninsula had long been China’s most important client state, but its strategic location adjacent to the Japanese archipelago, and its natural resources of coal and iron, attracted Japan’s interest. Later, the Russo-Japanese War (1904–05), allowed a victorious Japan to force Russia to abandon its expansionist policy in the Far East, becoming the first Asian power in modern times to defeat a European power. The Russo-Japanese War developed out of the rivalry between Russia and Japan for dominance in Korea and Manchuria, again in the struggle for natural resources (Tucker 1534-46).Japan’s victories, together with the county’s drive for resources, meant that Japan could now determine its role within the Asia-Pacific sphere of influence. As Japan’s military, and their adoption of Westernised combat, proved effective in maintaining national integrity, other social institutions also looked to the West (Ferguson 221). In an ironic twist—while Victorian and Continental fashion was busy adopting the exotic, oriental look (Martin and Koda)—the kimono, along with other essentials of Japanese fashions, were rapidly altered (both literally and figuratively) to suit new, warlike ideology. It should be noted that kimono literally means ‘things that you wear’ and which, prior to exposure to Western fashions, signified all worn clothing (Dalby 65-119). “Wearing Things” in Westernised JapanAs Japan modernised during the late 1800s the kimono was positioned as symbolising barbaric, pre-modern, ‘oriental’ Japan. Indeed, on 17 January 1887 the Meiji Empress issued a memorandum on the subject of women’s clothing in Japan: “She [the Empress] believed that western clothes were in fact closer to the dress of women in ancient Japan than the kimonos currently worn and urged that they be adopted as the standard clothes of the reign” (Keene 404). The resemblance between Western skirts and blouses and the simple skirt and separate top that had been worn in ancient times by a people descended from the sun goddess, Amaterasu wo mikami, was used to give authority and cultural authenticity to Japan’s modernisation projects. The Imperial Court, with its newly ennobled European style aristocrats, exchanged kimono silks for Victorian finery, and samurai armour for military pomp and splendour (Figure 1).Figure 1: The Meiji Emperor, Empress and Crown Prince resplendent in European fashions on an outing to Asukayama Park. Illustration: Toyohara Chikanobu, circa 1890.It is argued here that the function of a uniform is to prepare the body for service. Maids and butlers, nurses and courtesans, doctors, policemen, and soldiers are all distinguished by their garb. Prudence Black states: “as a technology, uniforms shape and code the body so they become a unit that belongs to a collective whole” (93). The requirement to discipline bodies through clothing, particularly through uniforms, is well documented (see Craik, Peoples, and Foucault). The need to distinguish enemies from allies on the battlefield requires adherence to a set of defined protocols, as referenced in military fashion compendiums (see Molloy). While the postcolonial adoption of Western-based clothing reflects a new form of subservience (Rall, Kuechler and Miller), in Japan, the indigenous garments were clearly designed in the interests of ideological allegiance. To understand the Japanese sartorial traditions, the kimono itself must be read as providing a strong disciplinary element. The traditional garment is designed to represent an upright and unbending column—where two meters of under bindings are used to discipline the body into shape are then topped with a further four meters of a stiffened silk obi wrapped around the waist and lower chest. To dress formally in such a garment requires helpers (see Dalby). The kimono both constructs and confines the women who wear it, and presses them into their roles as dutiful, upper-class daughters (see Craik). From the 1890s through to the 1930s, when Japan again enters a period of militarism, the myth of the kimono again changes as it is integrated into the build-up towards World War II.Decades later, when Japan re-established itself as a global economic power in the 1970s and 1980s, the kimono was re-authenticated as Japan’s ‘traditional’ garment. This time it was not the myth of a people descended from solar deities that was on display, but that of samurai strength and propriety for men, alongside an exaggerated femininity for women, invoking a powerful vision of Japanese sartorial tradition. This reworking of the kimono was only possible as the garment was already contained within the framework of Confucian family duty. However, in the lead up to World War II, Japanese military advancement demanded of its people soldiers that could win European-style wars. The quickest solution was to copy the military acumen and strategies of global warfare, and the costumes of the soldiery and seamen of Europe, including Great Britain (Ferguson). It was also acknowledged that soldiers were ‘made not born’ so the Japanese educational system was re-vamped to emulate those of its military rivals (McVeigh). It was in the uptake of schoolboy uniforms that this re-imagining of Japanese imperial strength took place.The Japanese Schoolboy UniformCentral to their rapid modernisation, Japan adopted a constitutional system of education that borrowed from American and French models (Tipton 68-69). The government viewed education as a “primary means of developing a sense of nation,” and at its core, was the imperial authorities’ obsession with defining “Japan and Japaneseness” (Tipton 68-69). Numerous reforms eventually saw, after an abolition of fees, nearly 100% attendance by both boys and girls, despite a lingering mind-set that educating women was “a waste of time” (Tipton 68-69). A boys’ uniform based on the French and Prussian military uniforms of the 1860s and 1870s respectively (Kinsella 217), was adopted in 1879 (McVeigh 47). This jacket, initially with Prussian cape and cap, consists of a square body, standing mandarin style collar and a buttoned front. It was through these education reforms, as visually symbolised by the adoption of military style school uniforms, that citizen making, education, and military training became interrelated aspects of Meiji modernisation (Kinsella 217). Known as the gakuran (gaku: to study; ran: meaning both orchid, and a pun on Horanda, meaning Holland, the only Western country with trading relations in pre-Meiji Japan), these jackets were a symbol of education, indicating European knowledge, power and influence and came to reflect all things European in Meiji Japan. By adopting these jackets two objectives were realised:through the magical power of imitation, Japan would, by adopting the clothing of the West, naturally rise in military power; and boys were uniformed to become not only educated as quasi-Europeans, but as fighting soldiers and sons (suns) of the nation.The gakuran jacket was first popularised by state-run schools, however, in the century and a half that the garment has been in use it has come to symbolise young Japanese masculinity as showcased in campus films, anime, manga, computer games, and as fashion is the preeminent garment for boybands and Japanese hipsters.While the gakuran is central to the rise of global militarism in Japan (McVeigh 51-53), the jacket would go on to form the basis of the Sun Yat Sen and Mao Suits as symbols of revolutionary China (see McVeigh). Supposedly, Sun Yat Sen saw the schoolboy jacket in Japan as a utilitarian garment and adopted it with a turn down collar (Cumming et al.). For Sun Yat Sen, the gakuran was the perfect mix of civilian (school boy) and military (the garment’s Prussian heritage) allowing him to walk a middle path between the demands of both. Furthermore, the garment allowed Sun to navigate between Western style suits and old-fashioned Qing dynasty styles (Gerth 116); one was associated with the imperialism of the National Products Movement, while the other represented the corruption of the old dynasty. In this way, the gakuran was further politicised from a national (Japanese) symbol to a global one. While military uniforms have always been political garments, in the late 1800s and early 1900s, as the world was rocked by revolutions and war, civilian clothing also became a means of expressing political ideals (McVeigh 48-49). Note that Mahatma Ghandi’s clothing choices also evolved from wholly Western styles to traditional and emphasised domestic products (Gerth 116).Mao adopted this style circa 1927, further defining the style when he came to power by adding elements from the trousers, tunics, and black cotton shoes worn by peasants. The suit was further codified during the 1960s, reaching its height in the Cultural Revolution. While the gakuran has always been a scholarly black (see Figure 2), subtle differences in the colour palette differentiated the Chinese population—peasants and workers donned indigo blue Mao jackets, while the People’s Liberation Army Soldiers donned khaki green. This limited colour scheme somewhat paradoxically ensured that subtle hierarchical differences were maintained even whilst advocating egalitarian ideals (Davis 522). Both the Sun Yat Sen suit and the Mao jacket represented the rejection of bourgeois (Western) norms that objectified the female form in favour of a uniform society. Neo-Maoism and Mao fever of the early 1990s saw the Mao suit emerge again as a desirable piece of iconic/ironic youth fashion. Photo: Emerald King, 2015.There is a clear and vital link between the influence of the Prussian style Japanese schoolboy uniform on the later creation of the Mao jacket—that of the uniform as an integral piece of worn propaganda (Atkins).For Japan, the rapid deployment of new military and industrial technologies, as well as a sartorial need to present her leaders as modern (read: Western) demanded the adoption of European-style uniforms. The Imperial family had always been removed from Samurai battlefields, so the adoption of Western military costume allowed Japan’s rulers to present a uniform face to other global powers. When Japan found itself in conflict in the Asia Pacific Region, without an organised military, the first requirement was to completely reorganise their system of warfare from a feudal base and to train up national servicemen. Within an American-style compulsory education system, the European-based curriculum included training in mathematics, engineering and military history, as young Britons had for generations begun their education in Greek and Latin, with the study of Ancient Greek and Roman wars (Bantock). It is only in the classroom that ideological change on a mass scale can take place (Reference Please), a lesson not missed by later leaders such as Mao Zedong.ConclusionIn the 1880s, the Japanese leaders established their position in global politics by adopting clothing and practices from the West (Europeans, Britons, and Americans) in order to quickly re-shape their country’s educational system and military establishment. The prevailing military costume from foreign cultures not only disciplined their adopted European bodies, they enforced a new regime through dress (Rall 157-174). For boys, the gakuran symbolised the unity of education and militarism as central to Japanese masculinity. Wearing a uniform, as many authors suggest, furthers compliance (Craik, Nagasawa Kaiser and Hutton, and McVeigh). As conscription became a part of Japanese reality in World War II, the schoolboys just swapped their military-inspired school uniforms for genuine military garments.Re-imagining a Japanese schoolboy uniform from a European military costume might suit ideological purposes (Atkins), but there is more. The gakuran, as a uniform based on a close, but not fitted jacket, was the product of a process of advanced industrialisation in the garment-making industry also taking place in the 1800s:Between 1810 and 1830, technical calibrations invented by tailors working at the very highest level of the craft [in Britain] eventually made it possible for hundreds of suits to be cut up and made in advance [...] and the ready-to-wear idea was put into practice for men’s clothes […] originally for uniforms for the War of 1812. (Hollander 31) In this way, industrialisation became a means to mass production, which furthered militarisation, “the uniform is thus the clothing of the modern disciplinary society” (Black 102). There is a perfect resonance between Japan’s appetite for a modern military and their rise to an industrialised society, and their conquests in Asia Pacific supplied the necessary material resources that made such a rapid deployment possible. The Japanese schoolboy uniform was an integral part of the process of both industrialisation and militarisation, which instilled in the wearer a social role required by modern Japanese society in its rise for global power. Garments are never just clothing, but offer a “world of social relations put upon the wearer’s body” (Jones and Stallybrass 3-4).Today, both the Japanese kimono and the Japanese schoolboy uniform continue to interact with, and interrogate, global fashions as contemporary designers continue to call on the tropes of ‘military chic’ (Tonchi) and Japanese-inspired clothing (Kawamura). Abstract:

Introduction With a deluge of mouthwatering pre-publicity, the opening of The Spotted Pig, the USA’s first self-identified British-styled gastropub, in Manhattan in February 2004 was much anticipated. The late Australian chef, food writer and restauranteur Mietta O’Donnell has noted how “taking over a building or business which has a long established reputation can be a mixed blessing” because of the way that memories “can enrich the experience of being in a place or they can just make people nostalgic”. Bistro Le Zoo, the previous eatery on the site, had been very popular when it opened almost a decade earlier, and its closure was mourned by some diners (Young; Kaminsky “Feeding Time”; Steinhauer & McGinty). This regret did not, however, appear to affect The Spotted Pig’s success. As esteemed New York Times reviewer Frank Bruni noted in his 2006 review: “Almost immediately after it opened […] the throngs started to descend, and they have never stopped”. The following year, The Spotted Pig was awarded a Michelin star—the first year that Michelin ranked New York—and has kept this star in the subsequent annual rankings. Writing Restaurant Biography Detailed studies have been published of almost every type of contemporary organisation including public institutions such as schools, hospitals, museums and universities, as well as non-profit organisations such as charities and professional associations. These are often written to mark a major milestone, or some significant change, development or the demise of the organisation under consideration (Brien). Detailed studies have also recently been published of businesses as diverse as general stores (Woody), art galleries (Fossi), fashion labels (Koda et al.), record stores (Southern & Branson), airlines (Byrnes; Jones), confectionary companies (Chinn) and builders (Garden). In terms of attracting mainstream readerships, however, few such studies seem able to capture popular reader interest as those about eating establishments including restaurants and cafés. This form of restaurant life history is, moreover, not restricted to ‘quality’ establishments. Fast food restaurant chains have attracted their share of studies (see, for example Love; Jakle & Sculle), ranging from business-economic analyses (Liu), socio-cultural political analyses (Watson), and memoirs (Kroc & Anderson), to criticism around their conduct and effects (Striffler). Eric Schlosser’s Fast Food Nation: The Dark Side of the All-American Meal is the most well-known published critique of the fast food industry and its effects with, famously, the Rolling Stone article on which it was based generating more reader mail than any other piece run in the 1990s. The book itself (researched narrative creative nonfiction), moreover, made a fascinating transition to the screen, transformed into a fictionalised drama (co-written by Schlosser) that narrates the content of the book from the point of view of a series of fictional/composite characters involved in the industry, rather than in a documentary format. Akin to the range of studies of fast food restaurants, there are also a variety of studies of eateries in US motels, caravan parks, diners and service station restaurants (see, for example, Baeder). Although there has been little study of this sub-genre of food and drink publishing, their popularity can be explained, at least in part, because such volumes cater to the significant readership for writing about food related topics of all kinds, with food writing recently identified as mainstream literary fare in the USA and UK (Hughes) and an entire “publishing subculture” in Australia (Dunstan & Chaitman). Although no exact tally exists, an informed estimate by the founder of the Gourmand World Cookbook Awards and president of the Paris Cookbook Fair, Edouard Cointreau, has more than 26,000 volumes on food and wine related topics currently published around the world annually (ctd. in Andriani “Gourmand Awards”). The readership for publications about restaurants can also perhaps be attributed to the wide range of information that can be included a single study. My study of a selection of these texts from the UK, USA and Australia indicates that this can include narratives of place and architecture dealing with the restaurant’s location, locale and design; narratives of directly food-related subject matter such as menus, recipes and dining trends; and narratives of people, in the stories of its proprietors, staff and patrons. Detailed studies of contemporary individual establishments commonly take the form of authorised narratives either written by the owners, chefs or other staff with the help of a food journalist, historian or other professional writer, or produced largely by that writer with the assistance of the premise’s staff. These studies are often extensively illustrated with photographs and, sometimes, drawings or reproductions of other artworks, and almost always include recipes. Two examples of these from my own collection include a centennial history of a famous New Orleans eatery that survived Hurricane Katrina, Galatoire’s Cookbook. Written by employees—the chief operating officer/general manager (Melvin Rodrigue) and publicist (Jyl Benson)—this incorporates reminiscences from both other staff and patrons. The second is another study of a New Orleans’ restaurant, this one by the late broadcaster and celebrity local historian Mel Leavitt. The Court of Two Sisters Cookbook: With a History of the French Quarter and the Restaurant, compiled with the assistance of the Two Sisters’ proprietor, Joseph Fein Joseph III, was first published in 1992 and has been so enduringly popular that it is in its eighth printing. These texts, in common with many others of this type, trace a triumph-over-adversity company history that incorporates a series of mildly scintillating anecdotes, lists of famous chefs and diners, and signature recipes. Although obviously focused on an external readership, they can also be characterised as an instance of what David M. Boje calls an organisation’s “story performance” (106) as the process of creating these narratives mobilises an organisation’s (in these cases, a commercial enterprise’s) internal information processing and narrative building activities. Studies of contemporary restaurants are much more rarely written without any involvement from the eatery’s personnel. When these are, the results tend to have much in common with more critical studies such as Fast Food Nation, as well as so-called architectural ‘building biographies’ which attempt to narrate the historical and social forces that “explain the shapes and uses” (Ellis, Chao & Parrish 70) of the physical structures we create. Examples of this would include Harding’s study of the importance of the Boeuf sur le Toit in Parisian life in the 1920s and Middlebrook’s social history of London’s Strand Corner House. Such work agrees with Kopytoff’s assertion—following Appadurai’s proposal that objects possess their own ‘biographies’ which need to be researched and expressed—that such inquiry can reveal not only information about the objects under consideration, but also about readers as we examine our “cultural […] aesthetic, historical, and even political” responses to these narratives (67). The life story of a restaurant will necessarily be entangled with those of the figures who have been involved in its establishment and development, as well as the narratives they create around the business. This following brief study of The Spotted Pig, however, written without the assistance of the establishment’s personnel, aims to outline a life story for this eatery in order to reflect upon the pig’s place in contemporary dining practice in New York as raw foodstuff, fashionable comestible, product, brand, symbol and marketing tool, as well as, at times, purely as an animal identity. The Spotted Pig Widely profiled before it even opened, The Spotted Pig is reportedly one of the city’s “most popular” restaurants (Michelin 349). It is profiled in all the city guidebooks I could locate in print and online, featuring in some of these as a key stop on recommended itineraries (see, for instance, Otis 39). A number of these proclaim it to be the USA’s first ‘gastropub’—the term first used in 1991 in the UK to describe a casual hotel/bar with good food and reasonable prices (Farley). The Spotted Pig is thus styled on a shabby-chic version of a traditional British hotel, featuring a cluttered-but-well arranged use of pig-themed objects and illustrations that is described by latest Michelin Green Guide of New York City as “a country-cute décor that still manages to be hip” (Michelin 349). From the three-dimensional carved pig hanging above the entrance in a homage to the shingles of traditional British hotels, to the use of its image on the menu, website and souvenir tee-shirts, the pig as motif proceeds its use as a foodstuff menu item. So much so, that the restaurant is often (affectionately) referred to by patrons and reviewers simply as ‘The Pig’. The restaurant has become so well known in New York in the relatively brief time it has been operating that it has not only featured in a number of novels and memoirs, but, moreover, little or no explanation has been deemed necessary as the signifier of “The Spotted Pig” appears to convey everything that needs to be said about an eatery of quality and fashion. In the thriller Lethal Experiment: A Donovan Creed Novel, when John Locke’s hero has to leave the restaurant and becomes involved in a series of dangerous escapades, he wants nothing more but to get back to his dinner (107, 115). The restaurant is also mentioned a number of times in Sex and the City author Candace Bushnell’s Lipstick Jungle in relation to a (fictional) new movie of the same name. The joke in the book is that the character doesn’t know of the restaurant (26). In David Goodwillie’s American Subversive, the story of a journalist-turned-blogger and a homegrown terrorist set in New York, the narrator refers to “Scarlett Johansson, for instance, and the hostess at the Spotted Pig” (203-4) as the epitome of attractiveness. The Spotted Pig is also mentioned in Suzanne Guillette’s memoir, Much to Your Chagrin, when the narrator is on a dinner date but fears running into her ex-boyfriend: ‘Jack lives somewhere in this vicinity […] Vaguely, you recall him telling you he was not too far from the Spotted Pig on Greenwich—now, was it Greenwich Avenue or Greenwich Street?’ (361). The author presumes readers know the right answer in order to build tension in this scene. Although this success is usually credited to the joint efforts of backer, music executive turned restaurateur Ken Friedman, his partner, well-known chef, restaurateur, author and television personality Mario Batali, and their UK-born and trained chef, April Bloomfield (see, for instance, Batali), a significant part has been built on Bloomfield’s pork cookery. The very idea of a “spotted pig” itself raises a central tenet of Bloomfield’s pork/food philosophy which is sustainable and organic. That is, not the mass produced, industrially farmed pig which produces a leaner meat, but the fatty, tastier varieties of pig such as the heritage six-spotted Berkshire which is “darker, more heavily marbled with fat, juicier and richer-tasting than most pork” (Fabricant). Bloomfield has, indeed, made pig’s ears—long a Chinese restaurant staple in the city and a key ingredient of Southern US soul food as well as some traditional Japanese and Spanish dishes—fashionable fare in the city, and her current incarnation, a crispy pig’s ear salad with lemon caper dressing (TSP 2010) is much acclaimed by reviewers. This approach to ingredients—using the ‘whole beast’, local whenever possible, and the concentration on pork—has been underlined and enhanced by a continuing relationship with UK chef Fergus Henderson. In his series of London restaurants under the banner of “St. John”, Henderson is famed for the approach to pork cookery outlined in his two books Nose to Tail Eating: A Kind of British Cooking, published in 1999 (re-published both in the UK and the US as The Whole Beast: Nose to Tail Eating), and Beyond Nose to Tail: A Kind of British Cooking: Part II (coauthored with Justin Piers Gellatly in 2007). Henderson has indeed been identified as starting a trend in dining and food publishing, focusing on sustainably using as food the entirety of any animal killed for this purpose, but which mostly focuses on using all parts of pigs. In publishing, this includes Hugh Fearnley-Whittingstall’s The River Cottage Meat Book, Peter Kaminsky’s Pig Perfect, subtitled Encounters with Some Remarkable Swine and Some Great Ways to Cook Them, John Barlow’s Everything but the Squeal: Eating the Whole Hog in Northern Spain and Jennifer McLagan’s Fat: An Appreciation of a Misunderstood Ingredient, with Recipes (2008). In restaurants, it certainly includes The Spotted Pig. So pervasive has embrace of whole beast pork consumption been in New York that, by 2007, Bruni could write that these are: “porky times, fatty times, which is to say very good times indeed. Any new logo for the city could justifiably place the Big Apple in the mouth of a spit-roasted pig” (Bruni). This demand set the stage perfectly for, in October 2007, Henderson to travel to New York to cook pork-rich menus at The Spotted Pig in tandem with Bloomfield (Royer). He followed this again in 2008 and, by 2009, this annual event had become known as “FergusStock” and was covered by local as well as UK media, and a range of US food weblogs. By 2009, it had grown to become a dinner at the Spotted Pig with half the dishes on the menu by Henderson and half by Bloomfield, and a dinner the next night at David Chang’s acclaimed Michelin-starred Momof*cku Noodle Bar, which is famed for its Cantonese-style steamed pork belly buns. A third dinner (and then breakfast/brunch) followed at Friedman/Bloomfield’s Breslin Bar and Dining Room (discussed below) (Rose). The Spotted Pig dinners have become famed for Henderson’s pig’s head and pork trotter dishes with the chef himself recognising that although his wasn’t “the most obvious food to cook for America”, it was the case that “at St John, if a couple share a pig’s head, they tend to be American” (qtd. in Rose). In 2009, the pigs’ head were presented in pies which Henderson has described as “puff pastry casing, with layers of chopped, cooked pig’s head and potato, so all the lovely, bubbly pig’s head juices go into the potato” (qtd. in Rose). Bloomfield was aged only 28 when, in 2003, with a recommendation from Jamie Oliver, she interviewed for, and won, the position of executive chef of The Spotted Pig (Fabricant; Q&A). Following this introduction to the US, her reputation as a chef has grown based on the strength of her pork expertise. Among a host of awards, she was named one of US Food & Wine magazine’s ten annual Best New Chefs in 2007. In 2009, she was a featured solo session titled “Pig, Pig, Pig” at the fourth Annual International Chefs Congress, a prestigious New York City based event where “the world’s most influential and innovative chefs, pastry chefs, mixologists, and sommeliers present the latest techniques and culinary concepts to their peers” (Starchefs.com). Bloomfield demonstrated breaking down a whole suckling St. Canut milk raised piglet, after which she butterflied, rolled and slow-poached the belly, and fried the ears. As well as such demonstrations of expertise, she is also often called upon to provide expert comment on pork-related news stories, with The Spotted Pig regularly the subject of that food news. For example, when a rare, heritage Hungarian pig was profiled as a “new” New York pork source in 2009, this story arose because Bloomfield had served a Mangalitsa/Berkshire crossbreed pig belly and trotter dish with Agen prunes (Sanders) at The Spotted Pig. Bloomfield was quoted as the authority on the breed’s flavour and heritage authenticity: “it took me back to my grandmother’s kitchen on a Sunday afternoon, windows steaming from the roasting pork in the oven […] This pork has that same authentic taste” (qtd. in Sanders). Bloomfield has also used this expert profile to support a series of pork-related causes. These include the Thanksgiving Farm in the Catskill area, which produces free range pork for its resident special needs children and adults, and helps them gain meaningful work-related skills in working with these pigs. Bloomfield not only cooks for the project’s fundraisers, but also purchases any excess pigs for The Spotted Pig (Estrine 103). This strong focus on pork is not, however, exclusive. The Spotted Pig is also one of a number of American restaurants involved in the Meatless Monday campaign, whereby at least one vegetarian option is included on menus in order to draw attention to the benefits of a plant-based diet. When, in 2008, Bloomfield beat the Iron Chef in the sixth season of the US version of the eponymous television program, the central ingredient was nothing to do with pork—it was olives. Diversifying from this focus on ‘pig’ can, however, be dangerous. Friedman and Bloomfield’s next enterprise after The Spotted Pig was The John Dory seafood restaurant at the corner of 10th Avenue and 16th Street. This opened in November 2008 to reviews that its food was “uncomplicated and nearly perfect” (Andrews 22), won Bloomfield Time Out New York’s 2009 “Best New Hand at Seafood” award, but was not a success. The John Dory was a more formal, but smaller, restaurant that was more expensive at a time when the financial crisis was just biting, and was closed the following August. Friedman blamed the layout, size and neighbourhood (Stein) and its reservation system, which limited walk-in diners (ctd. in Vallis), but did not mention its non-pork, seafood orientation. When, almost immediately, another Friedman/Bloomfield project was announced, the Breslin Bar & Dining Room (which opened in October 2009 in the Ace Hotel at 20 West 29th Street and Broadway), the enterprise was closely modeled on the The Spotted Pig. In preparation, its senior management—Bloomfield, Friedman and sous-chefs, Nate Smith and Peter Cho (who was to become the Breslin’s head chef)—undertook a tasting tour of the UK that included Henderson’s St. John Bread & Wine Bar (Leventhal). Following this, the Breslin’s menu highlighted a series of pork dishes such as terrines, sausages, ham and potted styles (Rosenberg & McCarthy), with even Bloomfield’s pork scratchings (crispy pork rinds) bar snacks garnering glowing reviews (see, for example, Severson; Ghorbani). Reviewers, moreover, waxed lyrically about the menu’s pig-based dishes, the New York Times reviewer identifying this focus as catering to New York diners’ “fetish for pork fat” (Sifton). This representative review details not only “an entree of gently smoked pork belly that’s been roasted to tender goo, for instance, over a drift of buttery mashed potatoes, with cabbage and bacon on the side” but also a pig’s foot “in gravy made of reduced braising liquid, thick with pillowy shallots and green flecks of deconstructed brussels sprouts” (Sifton). Sifton concluded with the proclamation that this style of pork was “very good: meat that is fat; fat that is meat”. Concluding remarks Bloomfield has listed Michael Ruhlman’s Charcuterie as among her favourite food books. Publishers Weekly reviewer called Ruhlman “a food poet, and the pig is his muse” (Q&A). In August 2009, it was reported that Bloomfield had always wanted to write a cookbook (Marx) and, in July 2010, HarperCollins imprint Ecco publisher and foodbook editor Dan Halpern announced that he was planning a book with her, tentatively titled, A Girl and Her Pig (Andriani “Ecco Expands”). As a “cookbook with memoir running throughout” (Maurer), this will discuss the influence of the pig on her life as well as how to cook pork. This text will obviously also add to the data known about The Spotted Pig, but until then, this brief gastrobiography has attempted to outline some of the human, and in this case, animal, stories that lie behind all businesses.
